Filipino Bacon (Tocino) | Good Times with Jen

  • Keep this easy-to-make bacon recipe in your back pocket when you need to make a good breakfast impression.
    INGREDIENTS:
    1 cup pineapple juice
    ¾ cup brown sugar
    ¼ cup low-sodium soy sauce
    1 tbsp garlic, crushed
    2 tbsp annatto powder
    2 tbsp kosher salt
    ½ tsp ground black pepper
    2 lbs pork butt, thinly sliced
    For the rice:
    2 cups cooked white rice
    1 tbsp garlic, minced
    Salt to taste
    Oil for pan
    fried egg to serve
    STEPS:
    1.) In a bowl, combine all ingredients. Be sure to evenly mix the pork into the marinade, cover with plastic wrap, and all it to cure in the fridge for 3 days.
    2.) To cook the rice, heat oil in a pan on medium and cook garlic, until golden brown and slightly crispy. Lower the heat and add cooked white rice. Season with salt and stir well. Set aside.
    3.) Remove pork from the marinade. Cook in a pan on medium heat, until browned and fully cooked.
    4.) Serve with garlic rice and fried egg.

    Yo guys, if you decide to make this a second time (yes, you have to make it at least twice lol) cook the garlic rice after the tocino on the same pan. The remaining tocino juices mixed in the rice is just 👌👌👌

      I can't imagine throwing out perfectly good bacon fat when I can use it for the other things I'm cooking. this sounds so delicious. I don't know how any Filipino can fit in a house. I wouldn't be able to with the wonderful foods I've been introduced to from the Philippines.

    Tried this exact recipe and it’s salty rather than sweet. So I suggest to add only 1 tbsp of salt cuz the soy sauce is already salty & add more brown sugar.

    SATURDAY MORNINGS = ALWAYS LIT IN A FILIPINO HOUSEHOLD!! I LOVE that smell of garlic fried rice on a Saturday morning. That's when I know.... the eggs are fried, the tocino is out, my parents like to serve anchovies(dilis) alongside... breakfast is served!

    In my family, we usually cut the tocino slices into smaller bits right before cooking them, that way you get more of that crispy caramelized bits! yum!!

    We kinda steam/boil our tocino in little water and wait for it to fully evaporate then time for frying, that's how we cook our tocino homemade or store-bought, no matter what the packaging says.

      Me toooo! I introduced my boyfriend (he’s Cambodian and not really familiar with Filipino food [aside from the dishes that are popularly known]) to -silogs (mainly tapsilog, tosilog, and longsilog) and when he first seen me cooking it, he thought it needed to cook longer because it was still red. I explained that I steam/boil it first and then fry. It’s definitely cooked thoroughly lol

    you know your fil enough when you eat this with vinegar on those tocinos and banana ketchup on those eggs.
