I just made this tonight for the family, and it’s pretty much gone! 😂😂 They said it’s hands down the best mac & cheese they’ve ever had! That smoked gouda is a brilliant touch! It was absolutely delicious! Appreciate you AB!!
That looks delicious! For Thanksgiving I made it and added cream cheese to mine and a little Dijon mustard and smoked paprika, and it was a hit! Everyone wanted my recipe. I added the cheddar and mozzarella instead of gouda but definitely used whole cream like you. Great minds! Have a blessed day!

Ah, it's good to see someone making Mac-n-Cheese sauce as thick as I like to do it. I love watching mac 'n cheese cooking vids and taking in little personal tips from several people, to keep perfecting one of the best simple dishes in the world. This one gave me, mustard powder.
Check Chef Jean Pierre as well guys, he makes an amazing Mac 'n Cheese and Jacques Pëpin has a cool short cut of roasting bread crumbs and putting that on top, so you don't have to put the mac 'n cheese in the oven. :)
absolutely use a little mustard powder, too...I add mine into the sauce as it thickens, before you add your cheeses...I'll give you another tip (you may already know this)...if you make a cheese sauce, because some people don't, when you add your cheeses, don't stir the cheese right away, just let it sit in your hot cream/milk sauce and let it melt naturally and then, finally, stir it all very gently to incorporate all your cheeses, which should be very melted at this point...this prevents your cheeses from getting stringy.

@@peterjanssen5901 Hi, Peter, I just saw this (so sorry)...I noticed I'd forgotten to mention turn off the heat under your cream/milk sauce, before adding your cheeses. I fry up onions and garlic to your liking (carmelized is best) in butter, of course, prior to making the sauce (using the same pan for both). Set the onions/garlic mixture, when done, aside and start making your sauce in the same pan (don't wash the pan). Another thing I do when making my sauce is add some freshly grated nutmeg along with the mustard powder and black pepper and a little Pink Himalayan salt, but not too much as cheese can be salty. When I am making my roux, I also add a few red pepper flakes (1/2 teaspoon) to the butter before I start adding the flour. I also heat my cream/milk in the microwave before slowly adding to the roux. When my sauce is nice and thick, I add the onions/garlic into the sauce, give a good stir and your sauce should be bubbling and the cheeses are the last thing...mix with your macaroni and bake in the oven at 350-375 for about 30-40 minutes (it should be starting to brown) and my then lay down another thick layer of cheeses and continue baking until the top layer of cheese is bubbly and somewhat golden brown. Let sit for about 15 minutes on top of stove so all the luscious ingredients set up a little bit...enjoy!
This is actually called blonde mac & cheese! In addition to white cheddar, I will use Kerrygold Dubliner, Pecorino Romano, Parm. Reggiano and an Asiago, these will take your “Blonde Mac & Cheese” to ‘AWholeNothaLevel’. I also will top with either Panko or Italian Bread Crumbs for some crunch!
Every since I took your advice and started shredding my own cheese, I absolutely cannot go back to bagged. My old lady will not accept bagged cheese. When you get that fresh block and shred that thang up yourself, it melts better, it doesn't have that plastic like film over it, it tastes fresher, not to mention you get way more cheese from self shredding a block then buying in a bag. Big ups AB.

The thumb nail caught my eye, I almost licked the screen watching this video that mac and cheese looks so good. I love using smoked gouda in my mac and cheese, I was introduced to it when I made the Broccoli Cheddar Soup recipe by Monique from Divas Can Cook which is very delicious by the way, and ever since I used it in the soup I started using it in my mac and cheese. I also started shredding my own cheese it's cheaper and melts much better than the bagged cheese
I've never seen or eaten white mac and cheese, but it sounds delicious!! I'm a color and texture person when it comes to my food so I'd have to ease into white mac and cheese since I'm so used to orange! Thanks 😊!!

Brother when you take any starch product like pastas out from hot water one thing to avoid is shock them with cold water, when you do that you remove the startch which is your binder that works like an adhesion to whatever sauce you're gonna toss that pasta in.
