It's neat to hear you talk about a duff, because I remember a pudding called plum duff back in the day, so I'm thinking duff is another name for pudding. My Mam would use the pudding bag all those years ago, such a lovely dish we looked forward to. It's a bit like sticky toffee pudding, delicious traditional recipes can't be beat. 😊 We liked hot custard with ours. 😊
Thank you so much for stopping by and I'm so glad you enjoyed our NEW recipe this week. Hot custard sounds lovely with that molasses duff, I must give that a try. Pudding and duffs are pretty much the same but some is made with eggs and some with baking soda and powder. They take you bake to simple days when our elders would be making a big Sunday meal with puddings, duffs and stuffings. So tasty, thank you once again and stay safe. :) Bonita
Thank you Susan and I'm so glad you enjoyed our NEW recipe this week. I have a link share under the video but I will share with you here kit.co/bonitaskitchen/kitchen-essentials/non-stick-steamed- you can look at the one we have on our site. I enjoy watching your cooking lessons. I get to see what other cultures eat. This looks like a good dessert. I am surprised you use molasses often in your dishes. I always thought molasses was a southern US thing. But I think it originated in the Caribbean islands in making rum. Do you think a rum sauce would be good with this duff? Thanks again for sharing.
Hi Neal: Thank you for your lovely message and for stopping by, we love using molasses here in Newfoundland and Labrador. Years ago our elders would get molasses in big containers and use often for many meals and baking. I have a traditional dark fruit cake recipe and link here with rum and of course molasses is one of the ingredients, th-cam.com/video/d1dBeYrL_z8/w-d-xo.html also we have Newfoundland Screech Rum but its made in Jamaica. Rum would be lovely used in this molasses duff or even used in the sauce. This is another recipe for Plum pudding with brandy and Molasses again. th-cam.com/video/rRbz59nTW6s/w-d-xo.html enjoy our recipes to the fullest. This looks beautiful! Making a pudding like this really is a skill. I'm allergic to molasses. Do you think I could substitute something like maple syrup?
Thank you Frankie, I'm glad you enjoyed our NEW video today, you can substitute with dark brown sugar. The method will be a little different because you are not putting the baking soda in the brown sugar only in with the flour. You will need to add milk or half milk and half water. I hope this helps and enjoy. :) Bonita
