Just saying... no gloves at all? That’s going to maybe cause some possible issues. Just saying

Kevlar its strenght is in compression strenght, absolutely not in bending nor stretching strenght. Glassfiber is way better in all aspects except conpression strenght (punctures etc) then just add 1 layer of carbon to the exterior layer to finish it up. For cost aspects carbon thought slightly weaker (almost nothing) then glassfiber is allot better as well. And way cheaper. A combo, again, with the utter most outer layer made of kevlar would be the best choice to go with.

But if it's bulletproof how is it they can drill through it.. sure it sounds durable.. but is it in practical use?

Kevlar canoes are actually somewhat more fragile than their fiberglass and aluminum counterparts.
The primary benefit of Kevlar is the reduced weight which makes it easier to portage (carry) when canoe tripping in places like the BWCA

I'm doing a research project for a material science class. What exactly is the manufacturing process used to create the canoe body?

bessybessy If you ever get one, you'll be glad you did! I own a 17.5 foot (5.3 meter) kevlar canoe that weights 36 lbs. (16.3 kg) - and that's after the addition of a few patches from the outfitters where I bought it used. I always said I'd never own a kevlar canoe, because they seemed like they'd be flimsy; but now I endorse them 100%! Aside from traditionally-made birch bark models, I've never paddled anything so responsive - or portaged anything so easily.
My one complaint is that, due the the size of my craft (it's a big three-seater), it has a tendency to catch the wind when I'm paddling solo and empty. However, since I usually use it for canoe-camping (and often go tandem), this is rarely an issue for me.
