When you get it up to temp do you shut the vent down..... I do everything the same as you as far as the charcoal goes.... but when I open up my vent like that the grill goes way over the temp... I shut my vent down when I get close to temp but it always ends up shooting way past 400 degrees no matter how I set it up it always over shoots
