"Mana transfer" is exactly what you suspect it would be in the original game. And every single time it popped up, it was absurd. Shirou High Jumping is actually a pretty big meme, you'll understand why once you watch Heaven's Feels.
It's not really absurd though, semen is believed in some cultures to have magical properties, to the point of making masturbation illegal. Since magic in Fate if often tied to belief (Servants gain abilities and attributes they never had if enough people believe they did, for example), it actually makes sense.

He can't do high jump but he keep trying anyway regardless how much he failed (parallel his dream being hero) Tohsaka who always lived by strict code of ethic, success driven saw this and basically fascinate by shirou because he keep trying to do something he cant do. (It implied she fell in loved with him then but repress herself.) There is an interesting dynamic between tohsaka and shirou that they are fundemetnally opposite one another but drawn to each other.
Not sure. The songs themselves have ranged from "meh, it's okay" to "that's cool" but they haven't really... "Hit" me. The animation in UBW OPs is great, but I'm a little partial to Zero, maybe because of "first time bias".
