I too was in the kitchen baking today. I made a fruit and nut bar, a recipe from a recipe swap I had back in early 90's it's a regular make for our family. We love apple pie especially after a roast dinner with custard. I use bramleys but only heat them a bit not to mush.I love the sharpe bit they give.
I saw an interesting twist on a dutch apple pie a few days ago, where it had a pastry base but a strusel topping with spiced apple filling. I think I'm going to have to make an apple and sultana pud in the next couple of weeks :D

Dutch apple pie - add in a handful of sultanas, adds sweetness as well as texture so less sugar needed, add in a pinch of mixed spice too.
