And omg, I’m amazed at how workable this ganache is 🤯 stored it in the fridge a couple days after whipped, heated it up and could re-whip it to new fluffy peaks! Super easy And it actually tastes like caramel! Thank you for sharing 😘
A HEADS UP - they’re caramelizing the white chocolate, do it for about 10-15 sec bursts in the microwave stirring GOOD every burst then doing that for a total of 3-5 minutes. You could also put it in the oven at a low temperature and stir it every 10 min for an hour (I recommend watching some videos from The Boy Who Bakes or Cupcake Jemma about caramelizing white chocolate ) :)

Thank you SO MUCH for this recipe! I recently tried to make homemade caramel with sugar, and it was a disaster. Then I bought some caramel sundae topping and tried to use it as a drip, but it dripped, and dripped, and dripped and drug the frosting off my cake. I am definitely going to try this.
I think it will help if you mention how where the caramel came from. Most viewers don't know that white chocolate when kept over heat for a long time will caramelize. Maybe mention for how long the white chocolate needs to be melted/stirred.

First time making Ganache. Is the piped consistency shown with butter added or strictly the white chocolate and whipping cream mixture? I wasn't able to get usable peaks with the Ganache and then it curdled from overmixing. I added butter as mentioned by your website and it was a lot closer to the piped consistency shown.
At its base, white chocolate is little more than milk, cocoa butter, sugar, and vanilla. When exposed to heat, the sugar caramelizes, transforming our plain white chocolate into a molten caramel.

I mentioned in the video to microwave white chocolate for 20 to 30 seconds intervals. If you noticed, I keep microwaving it until it turned into caramel.

Hi, Im not sure if compound chocolate will work. The chocolate you need to use should have atleast 30% of cocoa butter on it.
