well he was portrayed by Master Ip as a young kid. Hence, if Bruce was knowledegable that time, he could've dodged the water instead of kicking it. But he was cocky when he was younger
I have put some more thought into this and the what people are getting wrong is, the part with Ip throwing the water at him and him trying to kick the water is the sign that Bruce is not the fighter that he thinks himself or claims himself to be, Ip opening opening the door is just another test in the whole process one Bruce ultimately fails as he leaves. The reason is that he tries to kick the water, he attacks it and lands up wet, he faces everything with an attack or offensive mindset, this shows his lack of ability to adapt to the situation, which is why he says "did you kick the water or just think you were kicking the water?" you ultimately cant kick water and what Ip was trying to get Lee to do was to see if he would dodge the water as that would have been the smart, thing to do, the the adaptable thing to do, and something that each fighter needs to learn to a fight, adaptable. The n we come to Master Ip going to stand by silently by the open door, Ip may not have been asking Bruce to leave but just giving him another test standing by the open door to see whether Bruce himself thought he was ready yet or not, Bruce could have admitted his mistake to Ip and said I understand will you help you train me to become better, instead he possibly because of his ego at the time saw it as Ip saying you’re not ready (which he wasn’t) but telling him to leave rather because when ruled by that ego everything is very black and white, the door could have been another test that he failed, Bruce wasn’t yet ready to ask for Ip's help or anyone’s help, he felt he could do it all alone, which is another thing a fighter needs to learn you need to learn from others. So yes in a sense it could have been a test Ip was giving not telling him to leave or stay leaving the decision up to Bruce himself to see how he would react to the test. This coupled with the test with the water is obviously also reference to Bruce Lee's later quotes on water seemingly once he had learnt this lesson "when you put water in a cup it becomes the cup, when you put water in a bottle it becomes the bottle, when you put water in a teapot it becomes the teapot. Water can drip, water can flow but it can also crash, be like water my friend"here he clearly understands the different abilities and states water can take and its adaptability in different areas... the lesson Ip wanted him to learn

Think alot of people might have over-interpreted "Ip Man opening the door for Bruce Lee scene", although i admit it is a nice thought. However, i would like to provide from a Chinese POV. The act of opening door can be derived from the chinese idom "开门收徒". Which means in martial art/dojo concept "I accept you with opened doors". Ip Man was already fond of guiding Young Bruce Lee in his mentorship. In the scene @2:56 where Ip Man praises Bruce Lee for his speed, and then walks over to open the door. It just means that he is willing to accept Bruce Lee as his disciple with open door/arms. However, in Chinese cultural context, a person must “拜师” AKA formally acknowledge his/her apprenticeship to the master (e.g. on your knees and cupping both hands) in order to be accepted. The scene @ 3:13 supports my point above. Ip Man with both hands behind his back, was waiting for Bruce to 拜师. However, Young Bruce Lee did not get the hint, and instead mis-interpreted it and though Ip Man asked him to leave. In Chinese context, if someone were to "show you the door" they commonly will express the term "请“ / please gesture with an extended arm and guide you to the door and leave You could see @ 3:26 Ip Man can't help but to laugh and smile at Bruce's misinterpretation. p.s.
