      I'm enjoying Congolese dishes at the moment, there is a new restaurant near my house. What I like is how there are some dishes that are highlighted the same in Africa no matter what country you are in. Healthy, delicious and natural eating!

    I just tried your Salmon shitto-rubbed dish, excellent! Instead of the oven I used charcoal grill, putting the fish on top of Pimento wood sticks and smoked it with a can of soaked Allspice berries Jamaican jerk style. Very tasty, especially with the Meko sauce and Dokono/Kenke. Looking forward to trying your Suya peanut recipe too. Just got my African Nutmeg in the mail yesterday from the UK. Still waiting for my Grains of Selim to come. Garden Eggs, hmm.. Never heard of them before. I wonder how easy/hard they may be to get here in the US.

      You're welcome. And thanks for replying. Ever since I went to Ghana 15 years ago I been missing Ghanaian food, and now, thankfully with your recipes, I can make it at home. I have a question: I read that Jamaicans who invented Jerk originally came from Ghana and that Jerk came about as a substitute for what they originally had in their homeland. This raises the question that there is a Ghanaian equivalent or ancestor recipe. So my question is, do Ghanaians use a special type of wood to smoke their meat in a similar way to how Jamaicans use Pimento/Allspice? And what would that wood be?

      For those of us Americans, I found a place called AfrofoodTV, and it has a store! It's in the US too, and the store has all kinds of spices and things that are hard to get. Yeti, who runs the store, was born in Texas and lived in Nigeria in her childhood so she knows alot of African food and is herself a chef. Not to take away from this channel or divert, but, finding a good distributor of African spices is important for following recipes like on this channel. Especially in the US, as some of these things can be harder to get than in the UK.
      Store is located in Georgia, so this should make it easier for shipping (no customs hassle)
