I pull a similar trick by putting the meat in the slowcooker after smoking it on my Q. Just add the meat and the sauces to the slow cooker and let it simmer (on slow) for some hours. Pretty easy too and works every single time!
Thanks for this life hack! Just finished it and it turned out great! Delicious, tender, juicy. I did the pork neck in the oven and finished it in the jar. As a father of two I usually prepare everything for BBQ in sous vide when we have a party, with this trick when you spend like 15 mins in the kitchen it's very time saving 🙂 For sure making it again for the weekend!
If you can this long enough in a pressure cooker, it's shelf stable for years. I was actually just thinking about this the other day, as I have several pork shoulder & butts in the freezer, and quite supply of empty canning jars right now. I'd done lots of canned beef already.
Smoke pork. Vacuum pack with the ketchup and stuff. sous vide @ 85 degree overnight and eat for lunch then next day. I don't have kilner jars but if you cook it in bags it's easy to check by simply squeezing the bag to see if it breaks up easily. I did like the canning method though and think that would probably keep longer than a week or could be tweaked to do so if the situation requires. Please do a bangin brisket and can that for us. . Wow

You could just freeze some then pull it out for a gathering. For the detractors, have watch the Pitmaster smoke many meals on all sorts of appliances. You go Dutch!
In Europe we have access to the wonderful French canning jars by "Le parfait". They will never explode under pressure. I guess killer jars is an option, but they're more wasteful.
Could be easier adding your favourite bbq sauce to the jar, instead the honey ketchup mixture. But why does it take you 20hrs to smoke pulled pork before you discovered this method? I can do it in a third of the time

The industry does the same, but without the roasting... For me, it has little to do with pulled pork... or you can just buy the industrial products.
