I love the looks of your beef stew! Would you keep the same cooking time if the pieces were cut smaller? As in more bite size? I love getting a piece of everything on the spoon all at once. My mom's beef stew was a little different: a little thicker, with a bay leaf added & she made seasoned, pillowy dumplings that went on top & looked like little clouds.
My mom has done all of the Chinese cooking and since she passed away in 2017, all of her recipes went with her….until I found your channel. You keep it simple like mom did thank you.

I just made your recipe and it was delicious. The smashed ginger gave it a wonderful fresh flavor. Instead of potatoes, I added large chunks of daikon. Instead of boneless short rib, I used cut up boneless beef chuck cross rib steak (on sale this week) into large pieces. Since the meat was thinner that your short rib chunks, I only pressure cooked this for 20 minutes and let the pressure release naturally. The depth of flavor from all the ingredients is truly amazing. This will now be on my family’s regular rotation. Thank you for sharing one of you family recipes!

I forgot to pick up tomatoes, but otherwise followed your preparation. The boneless short ribs were a great suggestion and the flavor of the soup/broth was wonderful. I always enjoy your and Dude’s interactions.

Do you ever braise the short ribs in the IP before you add the veggies and water. It could add more flavor. This really sounds good, I cant wait to make it!

Beef stew is always a favorite like chili I can eat it year round. I would use unsalted or low salt beef or bone stock instead of water and add garlic and more potatoes.
Soup just like my mom made except she called it vegetable beef and hers also had green beans, chunks of corn, and lima beans… my dad ate his with vermicelli, mom and I ate ours with a spoon of Creole mustard (sub a spicy whole grain horseradishy German style) to dip the beef in.

It’s interesting that your family was this far ahead of a popular trend. Just wondering if your kids are still carnivore and how it’s worked out for them? I'm not sure, but I don't think it would. You could half the recipe and see how it works out. Or, you could try to fit it in the 3qt, and if it's above the max fill line, just put it in a big pot on top of the stove to cook.
