Chicharrón boiled in salsa verde and get a flower tortilla or two 😏 on the comal to heat it up then get some refried frijoles and some of the chicharrón con salsa verde and add it to the tortilla and you have your self a bomb burrito.🤤

Salt, it is to absorp liquid from the rind surface so it will be crispy when grilled.
Salt, to absorb liquid from the skin surface as well as give taste. The skin became dry hence crispy when grilled. It is a chinese cookibg method.

Watching all that amazing stock being poured down the drain was the most painful thing I've experienced all day.
My guess is boiling the skin not only flavored it but removed toxins.
Stock from pork rind is tasteless, ok to pour down.

13:12 That's called chicharrón here in Mexico, but it's way better in a taco with some guacamole or in a taco with some avocado slices and cotija cheese, or just alone with some lemon juice and a pinch of salt. But I wonder how it tastes the way they boiled it before frying it.
Probably a little less fatty than the usual chicharron con pelos.
