My mum shows me her amazing recipe and techniques for cooking the best Five Spice Meat Rolls (五香肉卷).
INGREDIENT LIST
====
600g Minced Pork 肉碎600克
250g Prawns 虾 250克
200g Red Onion 红葱 200克
250g Water Chestnut 马蹄 250克
Minced Garlic 2-3 cloves 蒜米 2-3粒
Minced Carrot (Steamed) 2 table spoons 红萝卜 2汤匙
3 packs of crackers (9 pieces) 苏打饼 9片
100g Corn Flour 玉米粉/生粉 100克
Wheat Flour 2 big tablespoons 面粉 2 大汤匙
Salt 1 teaspoon 盐 1 茶匙
White Pepper 1 tablespoon 白胡椒粉 1 茶匙
MSG 1 teaspoon 味精 1 茶匙
Light Soy Sauce 2 teaspoon (optional/to taste) 生抽 2 茶匙 (可选/随意)

Auntie Ah Choon is a self taught chef who for about 20+ years ran a successful Economy Rice Restaurant, Restoran Jia Ling in Skudai, Johor. With no real formal training in the culinary arts, everything she knows about cooking comes from a life time of pure experience, observation and self improvement. She has spent time a great portion of her life cooking in both Singapore and Johor Bahru, Malaysia. Ask any of her former customers, they'll happily testify just how amazing her food is and how efficient she is when it comes to being in the kitchen.

直接炸的话,会担心里面有时不熟。而且蒸了放冷过后才炸会比较香脆。也可以切小片来炸。 😊

Yes you can, but do make sure to boil a couple of pieces before wrapping to make sure the taste and texture is to your liking 😊

一般上不需要。 不过冷冻之前要确保已经完全不热了和外皮不湿,这样才不用担心外皮水分太多。

Oh my God, I thought the minced pork is supposed to be wrapped with beancurd skin. Why you need to put it into the boiling water to test ? Actually you can judge the texture by its look and feel. That proves that auntie is not so experience.
