I can use this recipe by adding other ingredients to vary my diet according to my needs. I have kidney disease so must limit how many potatoes I eat. I love potatoes but rice can be substituted in this recipe for the potatoes when my blood work show I must limit the potatoes. I am very disabled and have a problem with long cooking methods and recipes. I can not stand for long intervals at the stove.
