I stopped buying the bagged cheese years ago because of it not melting as well due to the anti-caking ingredients they add in it. I dont mind the extra step of shredding myself.

I like Mexican food but not too spicy. I have made something similar to this with hamburger in various flavors Italian Mexican and old fashioned hamburger and onions . When I make mine I combine all ingredients including frozen tots in a bowl and then put in a casserole dish and bake
It looks yummy, I don't jalapeños though. I'm going to ty it, maybe put some fried onions on it for a little crunch.

Do you really think by using light sour cream you are making this dish any healthier? That has to be one of the dumbest comments I have ever heard. I don't think people that watch their calorie and fat intake will be making this recipe.

I shred my own cheese, as it melts better than the bagged. I don't think the cellulose they use to keep it separated into shreds is good for me. I cannot do spicy, as I end up with blisters in my mouth!
