    If you want to get particular... The first Cuban sandwiches had Salami on them. Made in Tampa, FL. Afterwards Miami started to make them without Salami, which is how I prefer even though I'm from Tampa. Also, Cuban bread is an absolute must. I know it's not really available unless you're in Tampa/South Florida. But having Cuban bread makes worlds different. Great marinade! I use the same.

      Chaddcl0ps Gaming they were first made in Cuba by the Tainos. They were made with pork introduced by the Spaniards. It then arrived in Key West with the first Cuban immigrants. Ybor city made them popular as they had a cigar industry that supported a large Cuban & Italian population. The Cubans mixed with the Italians which is how Salami ended up in the ingredients. Meanwhile the Miami Cubans made them without salami because there was no Italian influence. Tampa is known for evolving the Cuban sandwich and making it popular, but it was not invented there. Since the Tampa Cubans had mixed and became “Americanized”, it’s not considered a true Cuban sandwich by the Miami Cubans.

      Not to brag but the bread has to be Cuban and there are different qualities of Cuban bread too.Details matter and by the way.7-11 stop selling crap Cubans that put a bad name to such a delicious sandwich

      If you want to, cuban bread is really easy to make at home. You just need flour, yeast, lard, and water. The technique is simple as can be, no fancy folding, just a bit of kneading and voila, soft, porky bread perfect for these kick ass sandwiches. Check out Chef John's cuban bread recipe. Cook's Country has a great recipe as well. The lard gives the bread a really unique porky flavor that kicks the whole porky sandwich up a bit. Great stuff

    Im a Tampa native. The Cubano is our city's sandwich. We also add sliced salami. And the authentic bread is AMAZING. I'll give you a like. The tenderloin looks fantastic. I enjoy your videos! :)

      cj jernigan, yep i agree! Im also from the Tampa area, and grew up eating authentic Cubans (Silver Ring Cafe, Columbia, little Havana on Dale Mabry). i gotta say it looks like Malcom got it right and hit it out of the park!
      Now all you need to go with that Cuban is a good Deviled Crab!

    I'm going to make these but I will brush on melted butter on the top of the sandwich and place a griddle on the grill then press it. Looks fantastic.

    Malcolm another winner - love your videos. I’ve been Gas grilling and Weber kettle grilling for years but am a rookie compared to you. I just got about a month ago a Kamado Joe classic and am loving it. I did my first Boston butt and ribs in it along with many grilling items. I’m telling you you are teaching me many things. I love good eating and my 2nd hobby is Mountain biking so hoping they counter each out. I now have 2 grill got rid of the gas one just don’t care for it.

    On pork loin and chicken when soaking in marinade take a fork and poke like you do a bake potatoe. That will get the marinade inside the meat and give you way more flavor.

    I use pork shoulder in slow cooker, (similar marinade but I add onions) I also use french or italian bread, Cuban bread is too crusty and if it's not fresh it's not good. I also use a toaster oven to melt the cheese and warm the ham and then use a panini press to finish it off. Usually I buy thin sliced virginia ham but last time I made it I used black forest ham and it was just as good.

    Malcom just one tip.....keep the mojo marinade and use it as a side dipping sauce. Absolutely awsome with the sweet citrus flavors.

    I'm a huge fan of charcoal too , one thing I noticed though was it didn't look like you soaked your wood chips before popping them on the grill. I find that it works so much better and lasts longer. But be that as it may.... yes sir, that sandwhich looks deliscious! Thankyou for the video brother.

    thats a great recipe,,my turn, I love tenderloins, but prior to bagging them, I put them in a bowl w/marinade and Fork them, use 2 forks, 1fork in 1out back and forth about 20x, then bag them, gonna be yummy.

    Nice sandwich, Malcom but cilantro & mint isn’t a typical Cuban seasoning for meat even though it’s a wildly available herb throughout all Caribbean islands. You’re gonna wanna go with oregano, cumin, bay leaves, garlic, extra virgin olive oil, salt, no pepper, bitter orange (substitute grapefruit & orange juice if you don’t have any), & don’t use lime juice as it’s very acidic & over powers the other flavors. It also doesn’t go with the mojo recipe. As for bread, good call, sir. All Roman Catholic nations love their lard bread.
