If you add some rocks to the pond and add some edible water plants such as and then section off part of the pond as a nursery area, by using the reeds to create a barrier to keep out the adult fish and plant some trees or bushes to create dappled shade, you would increase the chances of small fry surviving to adulthood and reduce your reliance on annual re-stocking. The fish will fertilise the water plants, but regular harvesting of the plants will keep it under control and you will create a aquatic permaculture system.
I remember 1969 , and my grandfather worked in a fish hatchery in California, we were visiting from Minnesota for weddings, and we're able to take tour of the hatchery, it really left a impression on me, I am now 68 years old and I still remember that day. I will never forget that day. 💗

Hi from an expat kiwi. Trout fishing is in my DNA. Smoked many Rainbow steelhead Trout using the following easy recipe. First cut the trout down the back leaving the belly flap intact. Lay the fish out flat on a rack skin down. Spread salt (not too much) over the flesh and follow this with brown sugar. Cover the fish and rack with tinfoil and leave over night. Trout has a very delicate flavour and heavy doses of herbs and Maple will mask this flavour. We use the hot smoke method with the trout laying flat on a rack and this smokes and cooks at the same time (usually around 15mins). Our smoker is the small portable smoker heated with metholated spirits in a small container. Watched your video trying to catch trout and if they are breaking the surface it means they are top feeding. In this case try using a fly fishing set up with nymph lures. The spinner you used is perfect for your little pond, cast it out and allow it to sink (depending on the depth) of the pond before winding in. Good luck. BTW largest Rainbow I ever caught was 15lb, sent it to a taxidermist, his premises was broken into that same night and my fish plus a lot of his gear was stolen. Eat the skins, if you cook it slightly hotter the skins become like crisps (chips) and have the most flavor… don’t throw the skins… if you don’t like them they are good for you dog as a flavoursome healthy chew snack

If you butterfly fillet your trout you get no bones. We used to sell smoked trout to our 60 restaurants and they were all butterfly filleted. We had a deer farm and sold smoked venison to the restaurants as well.

I've never smoked fish myself but I have canned salmon with my sister while her husband smoked the other half of a week's catch of salmon in the Straight of Georgia off of Vancouver island. One year, my niece gave me candied salmon for Christmas and it was so delicious!

It looks like the Brookies were a little over done in the picture but what I do is just smoke them after an overnight soak then pick all the meat off and add it to some cream cheese, mix well and you have a smoked fish dip. It’s great 👍🏻 I caught a limit of Brookies last week. Stream trout spawn on gravel beds not so much on sand. 👍🏻

Like you, Al, I love a good smoked trout. If you are looking for other recipes, I would suggest doing a simple poach in the oven with some white wine, butter, thyme, orange slices, and some orange juice. Gut the fish, but leave the heads on. Lay each trout on a sheet of foil large enough to make a pouch that will steam the fish. Add salt and pepper, pats of butter, sprigs of thyme and orange slices in the cavity of the trout. Bring the foil together to fashion a pouch, but don't close it yet. Then add your white wine and some orange juice and close the pouch up completely. Place on a sheet pan (in case some of the liquid escapes) and put in the oven for 10-15 minutes at 400 degrees. When they are done, you should be able to open the pouch carefully grab the head and slowly pull it down towards the ventral side of the trout and towards the tail. This will remove the spine and all of the rib bones. You may encounter a few bones, but the meat should be relatively bone free.
well done! the only thing I would add is a little butter inside or on top. you can also poach in a fry pan if an oven isn't available. just keep spooning the liquid over the flesh as it cooks.
This is similar to how we cooked them; left out butter and wine, used salt & pepper, lemon slices and herbs of choice, and just baked them in the foil in the oven or on the bbq. One fish per packet. When the packet was very limp they were done. We stripped the bones the same way. Leaving the head on releases the oils into the fish and the flavor is outstanding. No wine needed. We used heavy duty foil to avoid tears in the packet.

Hallo Al, a tip for the next time when you want to smoke fish. Try to put the fish in are on a piece of chicken wire and than in the smoker. You have less chance that they fall apart.
The way that your grass is growing on your new pastures is a tribute to your management and knowledge. I saw it before at the previous place too. The future looks good for opening up new fields. The secret to handling your lake trout is to just keep practising your filleting technique over and over until it becomes second nature. Oh! Yes. A very sharp fillet knife. I don't think that you have to brine your fish for so long. However, I can't taste it from here in Scotland to advise!😂. Just got my second wind watching you guys enjoying my favorite pastime, so that means it time to re-spool my untralite rods and take my grandson fishing! Sure he’s only three, but last fall he caught and landed a four and a half pound largemouth himself. Absolutely Al there is nothing like watching the kids fishing I used to love that so much when my three boys was beside me fishing, I didn't care if I caught a fish all I cared about is spending quality time with them that is a beautiful memory for me. Also I want to say I had a friend what he did for their trout would breed he brought a big backhoe in dog all dug all the way along one side of the pond very deep then he had a truck full of sand come in and he dumped it all along that side and his trial breed, maybe something to think about in the future. But I'll tell you this man have you got a homestead that is one beautiful piece of property
When I used to daydream about a farm pond, I wanted to stock it with (1) bluegill and sunfish, to get it started; (2) catfish to get it stocked wirh a good, larger fish; and (3) striped bass="stripers"!! It is an ocean fish, but since it swims upstream in rivers to spawn, it can stand living in fresh water. They are delicious fish! They are stocked in lakes here in Tennessee, but they might not do well in a shallow pond, since in hot weather, the warmer water can lose its oxygen. Warm water can't hold as much oxygen as cold. That's why there are more fish in the Grand Banks than in the Bahamas.

Thinking if you sprinkled a little maple sugar onto the fish before smoking it that would retain the sweetness. We buy a maple, garlic salt at the canning company in Littleton and our family likes that seasoning alot. That might work well on the fish as well.
If you smoke a salmon, be sure to cold smoke it, otherwise you have a lot of fat that rises in the fillet (also make sure to leave skin on, on one side). It stays firmer cold smoking it.

Greetings from Pakistan. The best recipe smoke fish. To poach smoked haddock, bring it nearly to a boil on the stove with some milk and pepper, then simmer it for 25:41 mixture before frying it in hot oil for about 8 minutes on the first side and a little less on the second. Best recipe to cook rainbow trout!!! Rainbow trout is such a tasty fish with a wonderful yet mild flavor - it doesn't need much enhancing at all, which makes it a very easy fish to cook. To bring out the best flavor out of trout, I used very basic ingredients: olive oil, salt and pepper, minced garlic, and fresh lemon slices. That's it! That's all you really need to make the best rainbow trout! Keep working and smiling 😊 The fish is baked on a sheet pan together with asparagus. This recipe makes a complete meal: you get the dinner (trout) and the side dish (asparagus) done at the same time.

We use to smoke salmon and suckers. We used apple juice instead of water for our brine. Alder and Hickory wood chips. I never like smoked fish but my late husband and son loved it. I was the one that made the brine and smoked them though..😂❤❤
the only lure I use is an all-white rooster tail. fresh or salt water. nothing can resist it. it's a freshwater lure but it still catches speckled trout in the ocean/Tampa Bay. try it some time

My best recipe for smoked fish is... Start with an 8-10 lb pork shoulder. Rub down with a mixture of 80% brown sugar 10% garlic powder 5% onion powder 2.5% salt and 2.5 % pepper. Smoke at 250° for 15 to 20 hours. By the way, I hate fish.

This year we stocked with white suckers to help control the algae. They seem to be doing a good job so far. We got them at Zetts Fish in Drifting PA

I prefer small pan size rainbow trout. Cook it by the creek or river where it’s caught. Went camping in central Michigan. Yum.

If you smoke a salmon, be sure to cold smoke it, otherwise you have a lot of fat that rises in the fillet (also make sure to leave skin on, on one side). It stays firmer cold smoking it.

If you had a vacuum sealer, you could have used the marinating setting, to infuse a deeper flavor before smoking.

Rainbow trout is such a tasty fish with a wonderful yet mild flavor - it doesn't need much enhancing at all, which makes it a very easy fish to cook. To bring out the best flavor out of trout, I used very basic ingredients: olive oil, salt and pepper, minced garlic, and fresh lemon slices. That's it! That's all you really need to make the best rainbow trout!

I like the rainbow trout the best. Yum, smoked fish! The cow shelter moved really well. It was 88F degrees here yesterday and humid! Azalea and Cookie look happy on the new pasture. Using the old Kubota for mowing the grass around the fishing hole. Good catch Gina. It looks like you guys had fun fishing. Really early in the day and at sunset are good times to fish. We use to smoke salmon and suckers. We used apple juice instead of water for our brine. Alder and Hickory wood chips. I never like smoked fish but my late husband and son loved it. I was the one that made the brine and smoked them though..😂❤❤

the only lure I use is an all-white rooster tail. fresh or salt water. nothing can resist it. it's a freshwater lure but it still catches speckled trout in the ocean/Tampa Bay. try it some time

I smoked these fish & others for so many years & I would say to not smoke them so long. I have a family that loves fish too.

My best recipe for smoked fish is...
Start with an 8-10 lb pork shoulder. Rub down with a mixture of 80% brown sugar 10% garlic powder 5% onion powder 2.5% salt and 2.5 % pepper. Smoke at 250° for 15 to 20 hours. By the way, I hate fish.
