it might have to do with the ube halaya you're using. cookies can be cakey if there's too much moisture in them so your halaya might have more liquid/moisture than others. i would recommend trying a different brand or using less!
I definitely did something wrong because mine came out look muffin cookies! 😂😂😂😂😂😂 but I took out the halaya and it came out okay haha but thank you for this recipe!!
How did you make it looks so purple at the end? I followed the recipe and mine came out looking brownish at the outside, not like yours that it still looks bright purple 🥺
i didn't add food colouring to mine. it all depends on the ube extract you used. some extracts have more vibrant colouring than others! if the dough looks too light in colour, you can add a bit more ube extract or gel food colouring if needed.
You can make your own ube halaya by boiling and mashing fresh ube! I've never done it myself before but I'm sure there are specific instructions online somewhere!

try to set your oven temp to up and down heat with fan on if you have convection oven coz thats how i usually set mine when baking😊

not really! you can get the purple colour with food colouring but you really need the ube extract for the concentrated ube flavour
