USC asks about disciplinary action and tries to convince the applicant that it won't be used against them and that they just want to know. But I think they're trying to trick the applicant into revealing things that won't actually be checked and that it will be used against them to reject their application.

Hi; I was recently informed of a detail concerning the grading system in France, and of my school institution. Apparently, my courses are all considered honors classes (that I was not aware of), and my GPA seems to be now a little higher than the one I filled out which does not put the best out of me. I have already sent out my application to other schools, but I would like to know if I 'm allowed to change information on my common app.

Submit the transcript yourself via email to the admissions office/r if possible. I've seen colleges add these types of amendments directly to the applicant profile/application before it is assessed.
What if I put that I ran track and cross country for 4 years in high school, but I don’t want to continue it in college?? Should I still mention that I did those sports? And does it give me any better chance of getting accepted?

Most students wouldn't lie about major activities, so even if it isn't on the internet it wouldn't matter because any student who's mature enough to realize the consequences of fabrication wouldn't do anything stupid. If the college considers accepting you and wants a verification, they'll probably contact you or your school for documents or anything else that you can provide them with, as proof. I am having trouble with the exact same thing- I was a recording artist for the All India Radio for a few years, but since those were for programs and not separately for albums or stuff like that, it's not on the internet (I think. I might be able to dig up a few links to the programs? Idk) so I was very confused. In any case, I read up and this is what I concluded. So you don't have to worry about your activity not being on the internet as long as you personally have documents to prove it.
What if a school doesn't have a Counselor at all !!! Who is gonna answer for transcript? And what abt community Services how do they verify that? Ive done 1or 2 and what about internship???
What if I made a typing mistake in the number of participants of the National Math Olympiad. I am from Paraguay and I got 1st in that, and I put it on my Common App of course, but I accidentally put one cero more. It had to be like this: "Gold medal, Math Nationals (x2). Ranked 1st out of 45,000 participants" But I put 450,000 instead. I hace already contacted my admissions officer to inform him about it. Was it the correct thing to do? I really did not mean to do that or exaggerate. I also attached to that email a photo with the gold medallists to give them proof of my honor.
Do universities check for plagiarism in LOR? I have got 2. One is 100% genuine. For the other one I was asked to send the draft by myself and I did copy paste some lines from Google 😐
Sorry to squash your hopes, but I think it will. If you can, IMMEDIATELY contact the admissions office and tell them there's been a small error in your application. They'll probably not penalize you then. But if you ignore the matter and they find out later, even if you get accepted, you might be rescinded. Don't take a risk, email/call them for help ASAP.

Basically, you could finesse your activities but you can not fake your GPA

Yes. Send an email to the AO you’re assigned or the admissions email. I’ve seen schools fix the issue or add a note to the application for readers.
