Is anyone else old enough to remember when Jiffy Mix was $.19 per box? It would go on sale for 2/$.25 at Easter, Christmas, and Thanksgiving.

I remember a quarter or .39 a box. Oh I’m old enough to remember coming over on the Mayflower 😂I just didn’t buy Jiffy then!
As a little girl, I had a little oven, similar to an easy bake. Mom would buy jiffy cake mix and jiffy frosting mix, and she taught me to mix small amounts and bake them in my little oven. Then I'd frost them. It was fun.
I remember when it was about 50cents
Even the blueberry muffin mix was also that price
always do it "to the best of your ability" - so cute that she says that

The sour cream chicken was an absolute winner!!! I can’t wait to try the others. The only thing I did different was to make it a one dish meal and I added a package of frozen mixed veggies.

I am so chuffed that you make at least one dish per week that's Mexican-inspired. That first recipe had my mouth watering (without the chicken 'natch, as we are vegetarians)! I usually make Alber's cornbread recipe from the side of the box so I think I'll sub it for the Jiffy, but I'm sure the dish will be fine. Your recipes are always FANTASTIC!

I made the enchilada casserole last night, and it's one of my new favorites!
I goofed, and thought it called for enchilada sauce, rather than plain tomato, so I made the homeade one someone commented in a recent video(I think it was the "25 dinners for $5"), and that was the best happiest accident ever! It added a lot of flavor.
I didn't have any cream cheese, so I substituted with sour cream instead. One last alteration was the addition of a jar of roasted bell peppers I pickled last fall. It added some nice sweetness.

I’ve been trying to find ways to use your all this stuff in my cabinet. I had jiffy mix given to me and I’ve never used it, just made the chicken cornbread casserole! It’s in the oven! Mines a little diff because of ingredients, and I added veggies. I’m ready 🤤
Love love these recipes when my boys were little they thought Jiffy mix was a sweet cake.When ever fixed it they wanted a big piece and then eating on that sweet cake they'd being out front door to play. SWEET MEMORIES FOR ME !!!❤

Good Sunday morning to you sweet Julia, hope you had a great week. The motor died in my double ovens last week, their not even that old. This is the 4th house we built with double ovens and never had that problem. The motor has arrived, and the repair man will fix it this week. I don't know why I told you all that, lol. I love the Jiffy cornbread it has a sweet taste . It work good with your recipes today thank you.
Then, it was more likely who ever made it added sugar, honey or maple syrup when, they mixed it, otherwise even cornbread mix doesn’t taste sweet on it’s own!

I recently made a chicken pot pie, but didnt have enough dough leftover for the top crust, i just poured some corn bread batter on the top and when it was done baking, it was the most delicious chicken potpie i ever had.

I miss getting Jiffy mix when I lived across the pond. Now I’m back in the UK and to get Jiffy we either have to resort to Amazon, where it’s ridiculously expensive, or get through an American food shop here , where it’s about $2.25 a box!
I suppose you could make a cornbread recipe from scratch, but that would definitely not make it quick and easy. Ha ha! Sorry to hear it’s so difficult in the UK to find it. Thanks so much for your support here 🙌🏼
