Sometimes you have been wanting to do a certain cruise for a while and you know if you don't book that cruise well in advance you might never do it. So I booked mine at big price as a single person with inside cabin for 1 week to Norwegian Fjords from Scotland. Cost of nearly £2000 and I don't want to see any deals before I go! I've done it so there!!
Things operate a bit differently with Disney Cruise Lines; after all they have a huge international pool of employees that can be offered discounted cabins.
We just booked a last minute cruise on Carnival Horizon in September. They gave us a balcony cabin upgrade to Cloud 9 Spa Room and $100 each on-board credit. That's $200 for the room. Yee-Haw!!!!
Airlines do this too, they expect a percentage of people to not show up. As crazy as it sounds it does happen. Last minute cancelations and some people simply don't show.

We watch the cruises in our area for last minute cruises. Sometimes they’ll have incredible deals and we try and book those

We just look on the Cruise Line website. The shipmate app has a nice feature where you can watch for price drops on your cruises
