    Hello Miss Lori and Mr Brown,I am still in the Ukraine,I sent a email,I don't know if you got it,I love cabbage,cabbage is big in Ukraine, they make cabbage rolls in clay pots,the grandma's do many variations of pickled cabbage or sauerkraut. LOL to you both,let me know if you got my email,its very hard here now,the war has intensified,I am helping so many wonderful people!!

      Oh, I am praying for Ukraine. I have friends that went there to help in the kitchens and the fields from Pennsylvania. The Reuben and Naomi Beiler family. One son Philip stayed and married a Ukrainian girl. Yes. I am praying for you too now.

    My grandmas & mom always did their kraut by the moon phases.
    I asked my sons friends about kraut, they made the usual "yuck!" faces. If we don't teach our kids the art of fermentation, we could be the last generation to make these wonderful probiotics.😢
    One of my best memories was sitting with my dad watching "World at War" series. We always had a tub of home popped popcorn, big A&W mug of ice water from the well- and a big bowl of cold sauerkraut!😋😍vcd

    My friend often makes homemade sauerkraut. She is very into juicing, natural cures etc. but she's been tricked now and then. She keeps going though, and I just wish I liked sauerkraut because I have bacterial overgrowth in the small intestine and fermented foods are very curative for this. I love your videos, your kitchen and your outlook on life. (Good thing my brother and his wife had kids because they taught me everything! LOL) I grew up in a 1702 house in country Connecticut but now I live in senior housing and am recuperating from a stroke. It's pretty small quarters in here and I miss that house and doing all the things my dad and mom showed me.

    When I was a kid, my Grandmama had a five gallon crock that she made full of saurkraut. It was my job to do the tamping. I remember like it was yesterday. Yes, homade is so much better than the store bought. Thank you Miss Lori for sharing. 🙂❤️

    My mother used to fill a crock with cabbage, pickling salt and red pepper flakes and cover it in a work shed in the summer. It would ferment naturally and it was so cool and refreshing to just grab a little with your fingers when out playing. She had to have known we were snitching a little along, but never said anything. It was put in jars and kept tightly closed in a dark cabinet for us to eat all year. I don't think she water bath or pressure canned it. She just allowed it to continue to ferment in the jars. She would loosen the lids every once in a while so the jars didn't explode. My memory may be wrong.

    Yes! My Mom and Dad made Our Own kraut. And so did my Grandmother. So much better then the store purchased kraut in the can now-a-days!

    My maternal grandmother made sour kraut. She kept hers in a crock. It was delicious! I love to put it on a hotdog. Grandma would make fried pork chops, fried potatoes, sour kraut and cornbread. Oh my, I sure wish I had it right now. God bless you and your family.

    Hi! My mom had this affordable dish often when she was young. Gramma and pappy had barrels full of kraut. I love kraut. My mom makes really, really good saurkraut. She puts meats in it!

    Hi Ms. Lori. The weather is so odd this year. Sounds like you’ve got California weather at your home. Here in Ca. We’ve actually had a full spring for the first time in years. Even though it’s summertime, we are still only in the 80’s when this time last year it was around 110! I think the really wet winter (flooding. Etc) has a lot to do w/it. I’m not complaining tho! 😊
    This recipe sounds really good! I’m saving it.

    I use Charles’s recipe as well for squash and okra! It works great and I still have some in my pantry from 2021 we’ve been eating on until our garden started producing this year. It’s been awesome!

    I love Kraut! Homemade is the best! Love eating on a Hotdog, with Smoked Sausage or Kielbasa, or with a bowl of Pintos or Butter Beans! Its so good... Thank you Miss Lori for making it for us. My mouth was watering so bad. Lol I need my Daughter to help me make some! I'll do it this coming up weekend! I have a big crock and I'm going to do 3 large heads of cabbage. I love it with onions and apples. Momma always canned hers that way! Can't wait! Thank you again and Blessing to you and Mr Brown...🙏🙏❤❤🇺🇸

    I had not thought of coriander in sour kraut. I usually add some carroway seeds. I'm a big fan of fermented foods, so I will be trying this recipe.

    I have those crocks, I have several little tiny ones, one medium one I picked up on Idaho road Crystal, MN, and a huge one with a wood lid From the Johnsons (mom's family). The ironic thing is for this video.., Dad and I did this, I dropped his Apple 5 I -phone in the Saur Kraut! That just hit me. I caught hell for that. yeah, I messed up bad. True story!     As a child my Mom had me clean up after a can of kraut exploded in our pantry. The smell was putrid and refused to eat kraut until I became an adult. Now I love it ,but confess I buy the Boar's Head store bought. It ain't bad with apples/onions & kielbasa in the crockpot....Glad the issue was resolved with your phone because I would miss you!

    My mom always canned the prettiest and best kraut. She just used salt water. And she canned it in mason jars with rubber rings and zinc lids. She'd always tell me and my sister to stay away from it if we were on our period cause it would cause it to go bad. She kept it down in our basement, away from us. She said the said thing if she made pickles or canned tomatoes, stay away if we were on our period. Have you ever heard that Lori?

      Yep, heard that all my life too, we were not allowed to help around anything being pickled, beans, corn, pickles & kraut for sure.....back in those days, they believed it and so did we.....so we got out of helping which could be a good thing ...lol.....but I thought it was fun to do things like that....I remember my Dad always using the Farmer's Almanac .....when they would kill a hog for the winter, they went with signs in the Almanac and for planting, etc.....I just wonder if anyone uses it anymore.....every hear of that ??

      @@justanotheralmaroad1923 I too heard "stay away" from the cuke vines when having a period! Hey, I'm in NE Tennessee too (Kingsport)! My mom was a stickler about planting "when the signs were right" as well! About the signs, if I ever got a little kitten to keep, mom even said not to take it from mama cat until the "signs" were far away from the head because the kitten would cry and cry for its mom during the weaning process. She believed all those old wives tales and the Farmer Almanac "signs"!

      You could drain the sour kraut and make a coleslaw type of dressing and use that on the drained kraut as a cold salad.

    I was always taught that cabbage should be treated with salt before you used it for anything. Just 1/2 teas. salt for every 3.5 oz. cut-up cabbage. No water. Let stand for 15 minutes - no more. Rinse and throw away the liquid which is bitter. Then make into sauerkraut or coleslaw or casserole, etc. The cabbage flavor is so much nicer after treatment.

    Hi Miss Lori! You did a raw pack sauerkraut recipe that was pressure canned a few years back that I think you said your grandma did. I love it and two years later, it still tastes great, the seals all held. My question is, do you think I could use that same method, but toss in some of the onion, apple and caraway into it and raw pack it all as I did in our grandma's recipe? Thanks.

    When I was a young'n I used to think we had ghost because of the way the crock lid would rattle when it burped out some gas LoL! We did some kraut (loved it with carrots, pears too, we had a lot of them), but my mother was a pickle queen. We had 40 crocks just for pickles.

    Amazing timing. I picked my first two heads yesterday ( also having big issues with cabbage moths) and was wanting to do fermented cabbage as in trying to rebuild my gut health after a nasty bout of something. I ordered weights earlier today. 😂 Thanks for the education!

    I have never made sauerkraut but I remember tasting some really good sauerkraut when I was a child. In the last couple of years I have found an organic sauerkraut at Costco and it’s so reminds me of what I had as a child.I love this recipe and I may have to try it.

    Mrs Lori, I have had really good luck planting marigolds with my cabbage and greens(kale, collards)
    to keep the bugs away.

    Miss Lori when i grew up on the farm Mama and daddy had a big garden because there were about 6 still at homethen i got old enough it was my job to make kruat i would cut it up put it ina churnand the cut it up every time i would put a dishpan inthe churn and it make its own brim then i would put on it like you did then always had a rock she put on top of the leaves and tidea white cloth around the churn we would carry to the smoke house we would check it to see if it still look good i think after 9or. 12 days it would sourkruat then she can it we had sour all winter.     My daddy used to make his own kraut in a special crock. It was the best and made the best sausage kraut hand pies. Haven't had one in 50 years. We ate kraut with just about everything. He was from Fredericksburg Texas (German).

      @WhippoorwillHoller Kielbasa or Smoked Sausage chopped or minced; sautéed with onions, peppers( sweet or hot) & drained kraut. The pie dough is made savory with chicken or beef powdered bouillon. Rolled and made in the same manner as a fruit fried pie. Hope you can try them, I know yours will be just as good as my dads was.

    My husband and I have made 4 batches of sauerkraut over the past few months. Our first batch was so good, but the other 3 not so much. They were all made the same way. 😳 I love sauerkraut now, but never even heard of it as a child. Our method differed from yours--we followed the “recipe” from Mary’s Nest. (a TH-cam channel and website). I didn’t know your method at the time, but they are very similar!
    It sure is good for the digestive tract…….😉😂

      @@WhippoorwillHoller my husband and I have theorized that perhaps the cabbages we used were old, or perhaps we were off in our salt measurements. We used half gallon Mason jars for our fermenting, and maybe the lids were screwed on too tightly. Our first batch bubbled up and out from under the lid every day after about the first few days. So we’ve halted our process for the time being and will try again at a later time.

    Lori, when I make kraut I use green stones from the beach for weights. I do not know what is in those stones but they put a mineral favour in the cabbage. I am not suggesting people go and use stones for weights. But here, I call them Irish vitamins. 🤗💚💚💚🍀🍀🍀

    We grew 200 heads of flat dutch. Sold around 175 so far. We always put wood ash around and on our cabbage to keep bugs off. Black pepper also. 😊

    Germans use caraway seeds! Wonderful our maid would make sauerkraut and spare ribs!!! In almost 70 yrs I still remember the taste

    My son made some homemade Kraut and none of us liked it. I guess we’re use to the store bought. He said he was going to use a different recipe and try it again. It wasn’t tart at all or salty enough. I think he canned his like your grandma. Just not enough flavor. I will send him your video. ❤
