Did you grind the mustard/poppy seeds with salt? That cancels any slight bitterness in mustard seeds. You could also increase the amount to poppy seeds to balance out any bitterness. If it’s still bitter, you should try another brand of mustard seeds. It’s unfortunate that some mustard seeds are just a lot more bitter than others. Not sure why 🤷♀️

I personally don’t like adding ginger/garlic when I use white flaky fish, for example but I do feel like if you are using Salmon, the flavors of ginger/garlic would enhance the taste of the curry. Do let me know how it turned out!

Oh!! Mustard seeds are slightly bitter which is masked by the salt and poppy seeds. Unfortunately sometimes (some brands) are a lot bitter and you should try buying new ones of another brand :(
Your translation for caraway seeds said kalonji and you said black jeera which are totally different. How do I believe your recipe when you yourself doesn’t what exactly goes into it?
Yeah caraway and black seed are translated the same amongst Desi people, depending on the region. Black seed is the word commonly used by Caribbeans and the African diaspora but Nigella seed is the most common word amongst Europeans for kalonji or kala jeera.
Oh :( some batches of mustard seeds are bitter. It’s unfortunate. Please try changing the brand. Also grind the seeds with salt when making the paste. Sorry your efforts were wasted :(
