do you still only keep an Ayrshire herd? do you make your cheese with animal rennet? thanks

Bought some at Jericho Cheese Shop in Oxford. A revelation. Eat it fast - it won't save more than a day or two once cut. So good in an omelete (less of it than you'd use of a pasteurized cheddar) or just to nibble on with a glass of Bordeaux.
