1:05 I do agree, as a Polish, currently with British citizenship as well.. so called Cheddar, sold in PL, no matter the price, no matter what manufacturer (not a craftsman) says, tastes like damn rubber tyre. Sometimes a burned rubber tyre. Tasteless mass where even structure of "cheese" is different. When I visit PL, 40-70% of my luggage (by weight) is the true Cheddar :D
If you ever do this trip again can I come??? Got my first taste of this as a Christmas gift from my husband from you a few years ago- made me visit the Etivaz desalpe last year!

Bought some at Jericho Cheese Shop in Oxford. A revelation. Eat it fast - it won't save more than a day or two once cut. So good in an omelete (less of it than you'd use of a pasteurized cheddar) or just to nibble on with a glass of Bordeaux.
Recommend everyone supports British Quality Cheesemakers like The Courtyard Dairy in Suffolk as there is so much quality right here on our doorstep.

Found this video helpful looking into my favorite Colby Cheese which uses this process in part en.wikipedia.org/wiki/Colby_cheese and helped me identify which flavors make it so good. (FYI Joeseph Family Farms is a good source)
