I just saw this a while ago! I love your Lechon Roaster, plus your Dad’s heirloom recipe seem really delicious. I’m sure you’ve watched a lot of lechonero vloggers and you might have come across on some great lechon recipes as well. Though Manila’s & Cebu Lechons are the most popular back home but Ingot excited as I was watching this particular vlog of yours! I went to see gazillion kinds of on how to do Lechon; I even had a custom made “Lechonan” about 18 years ago or so, then I saw La Caja China Box, that was invented by this Cuban guy who is now base in Florida. Anyway, as I went along watching Lechonerros vlogging I saw this Cuban Lady and got her basic recipe in marinating a whole hog for 1 week!!! I got so excited and I thougt that marinating a whole hog for one week was very unusual and I was a little skeptical too. I did almost exactly the process of her marination, except I added more Asian spices that gave me an out of this world best Lechon I’ve ever had in my life! I really thought that our Filipino Lechon is the best in the world, but personally, after I tried this lady’s recipe, its just that distinct flavor that I am looking for since the . Her process of marination is labor intensive but its worth all the work! I wish someday you’s try her recipe, not meaning to insult your Dad’s heirloom recipe because that is as almost close to the kind of recipe I used before, until I discovered this Cuban recipe. The vlogger’s channel is “Errin’s Meals in Heels - Cuban Pig Roast”…
The vlog was a little too long, but “The marination Process and the result is something that I can 100% recommend because I’ve tried it already. I hope you’ll consider it! more power to your channel! God Bless!

Thanks for sharing that. Yes I will try that recipe next summer. We usually do our Lechon in July & I'm open to other recipes for sure.

@@jonahvlogsdiy4143 I am so looking forward to your own version of that recipe and process; I know that you need not to literally fallow the process step by step; you know what I mean… but I think the most important thing is the ingredients and the 1 week marination as I could really tell that intense taste of the meat . I guess you don’t need the La Caja de China, just do the marination process and use your home made rotisserie! Thanks for hour reply and please give me a head’s up as soon as you do your vlog on this! God Bless!

Jonah, my friend, loved the video. My wife is a Filipina from Isabela Province in Northern Luzon. We are practically neighbors to you, we live in Kalamazoo, MI USA about 2.5 hours away. Sometime I would like to pick your brain on the best strategies for building a lechon pit, I want to build one so bad - lechon may be the best food on earth!

That's very close to Windsor. We love Lechon. I'm from Cebu. If you have more questions just ask away.

We just stuff it with banana leaves but of course that's back in the Philippines. It's hard to find banana leaves here in USA. I miss the lechon.
