I have never been a big *foodie* but I love cooking for my family and watching them enjoy it. This ability would take a lot of work and time to build the talent. You did awesome Joel.
Try Lechon from the Philippines. It is a full-sized adult pig, but there is a smaller version of it. The skin is also crispy, it is also cooked over the fire, but the cooking process is a little different since they rotate the pig on a stake to ensure the pig is cooked evenly.
I think Joel is probably done eating whole pigs. Like now he can say he did it. The whole video he is saying the pig is so greasy (so much fat on pigs). You can tell he enjoyed the accomplishment, but not so much putting all that fat into his stomach. I bet he doesnt do this again.

The pig was put on a steel bar with a steering wheel affixed to one end. Everyone would take turns spinning it. We upgraded to a 2-cycle engine with a chain to turn it years later. Haven't seen it made that way for decades since relocating to the states. Good memories!

Every crunch made my mouth water more and more! I'm not usually into eating meat that "looks like" The animal but that looked and SOUNDED delicious!!! Reminded me of eating a Pork Roast in the UK and getting the Crackling perfectly crispy and juicy, YUM!!!!

Acidic dipping sauces help as well. Acid cuts fat which is why a lot of people put pickled things as a pairing with items.
