Easy cecapreti pasta with "fake" sauce! | Pasta Grannies

  • 89-year-old Caterina makes cecapreti pasta (they are called other names like cavatelli and raschiatelli in other regions of southern Italy) served with 'sugo finto', a "fake" sauce since there is no meat added. This is a fast pasta and sauce to make with ingredients you probably already have.
    300g 00 or plain, all-purpose flour, 150ml water ( try and make the cecapreti pencil thickness in diameter so they cook more quickly)
    For the sugo finto: one onion (you can also add garlic, celery, carrot if you want), 600ml passata, salt, black pepper, chilli pepper (to taste), basil leaves. Parmigiano to serve.
