AHHH I've never met someone with the same b-day as me! I did an incredible free walking tour in the old part of the city at was amazing and I would highly recommend. Also visiting the Sagrada Familia was definitely worth it. There are sites with ancient ruins that are free to enter and super interesting! I hope that's helpful :)

Fingerless mitts are great for on skein, there are many free patterns on ravelry. You could also do a tea or coffee cosy, or house slippers. Use the scraps to make frog different sweaters 🙈

What a wonderful memory you created with your friend. Just a suggestion, a Musselburgh Hat is great pattern to use up one skein.

I've never made one myself, but I've heard that you can make a vest top out of one skein of fingering weight yarn (e.g. the ones by Jessie Maed designs)
