Your chopping anyway so I would have chopped the olive to an used black instead of green but that's me , is food for thought using egg as a binder instead of mayo an frying it , for sure the bread needs help to , Great Video Thx for it 🙂

I have never even heard of this one and i've been 'researching' the topic for 15+ years or so. Australia just doesn't have the local history America has but I can guarantee it will only get more seasoned as time goes on. Viva la 'wich.
😮wow, never heard of this, but...there is a tradition of Chinese restaurants having a locally adapted item in many locations, the one i know best is Ireland's Spice Bag! Basically chips(fries) and chicken, onions, peppers, and 5 spice powder...a beloved tradition!
Cook's Country (from America's Test Kitchen) actually made this sandwich a couple of years ago. They visited the Fortune Express Restaurant and did a version of their offering. It's roughly this sandwich, but more "egg foo young-y." A TH-cam search will take you to their video.🙂

Transplant StL dweller here. The origin of the St. Paul, as I heard: There was a local chop suey joint that was losing business because of construction on a nearby cathedral. To generate revenue, they started selling the sandwich to the workers and it spread throughout town.
Weelll... I was extremely confused that the st. Paul sandwich is actually a st. Louis sandwich. Mainly because the st. Paul/Minneapolis metro area is the fourth largest population in the United States. Thats my bias, I guess. Also, it looks really good. I'd eat the hell out of that
I found a 1894 Newspaper article from the St Joseph Gazette that mentions a St Paul Sandwich it was from an article about a city council meeting and it mentions a man who “he is as badly missed as a St Paul sandwich”. I found another story from 1899. That has a reference to a man making a St. Joseph sandwich as he talks about another subject. it describes how he is scooped up some deviled ham, fries an egg and then uses onion and mustard to complete the sandwich. That one is from the St. Louis Globe and Democrat 1899. I have screenshots but I can’t share them here obviously

I’d like that you added the mayo, but the egg looked burnt. I like my eggs yellow. I tried cooking eggs in one of those square things and all the egg ran out the bottom. It was a nightmare and a mess. I suppose if you mix it up with all that other stuff, it might hold together better, well clearly it does. Interesting.🎉
You can use a cheese grater to put pressure on top of the egg ring to keep it from leaking. Also an oval sardene can makes a nice egg ring. Make sure you burn off the plastic coating from inside the can
I think seasoning that pan would have gone a long way here. I always cook eggs in a stainless steel skillet, and they come off the pan like a dream as long as you season it at the start.

Growing up in St. Louis I saw the St. Paul on all kinds of Chinese menus. Never knew a single person to order it.
I used to have these sandwiches at Chinese Wok Express in Columbia, MO. Pretty tasty, nothing to write home about.
