  • No Bake Blueberry Cheesecake Without Gelatin | Eggless No Bake Blueberry Cheesecake

    No Bake Blueberry Cheesecake:
    For the cheesecake base:
    Marie Biscuits - 25
    Melted Butter - 1/3 cup or little more
    For Cheesecake Filling:
    Sweetened Whipping Cream - 1 cup
    Cream Cheese - 250 Gms
    Powdered Sugar - 1/4 cup (optional)
    Chopped White Compound - 1/2 cup (first measure, then melt it)
    Blueberry Filling - 1/4 cup
    More Blueberry Filling On Top To Garnish
    Instructions:
    1. In a mixer grinder process the biscuits in a coarse powder and mix with melted butter.
    2. Place a 7-8 inch ring mould on a plate/base. Then press in the biscuit butter mixture and set it in the refrigerator.
    3. Meanwhile in a mixing bowl, whip up sweetened whipping cream to stiff peaks and then blend in soft cream cheese, sugar and give a good mix.
    4. Then pour in melted white compound while continuously beating. This is the secret ingredient that helps to set the cheesecake really well even though it's no bake.
    5. At this point you can fold in some fresh blueberries which is optional.
    6. Now take the ring mould out of the refrigerator and add in the prepared cheesecake filling from top and spread it evenly with an offset spatula. Tap twice gently.
    7. To finish off, top with some blueberry filling and let it set in the refrigerator overnight or minimum 3-4 hours.
    8. Once set, run a knife around the the cheesecake.
    Demould, cut in slices and serve!

    3. No baking is required, just set well for 4-5 hours or overnight in the refrigerator.

      If at all you are using amul cream, use only the thick part and leave out the watery part. Also increase the amount of white chocolate from 1/2 cup to 3/4 cup

      White chocolate is very sensitive to heat. Please chop it finely and then melt white chocolate at 20 second bursts twice. Also cool down the melted chocolate and then add it into the whipped cream. Mix immediately

      Never measure ur ingredients in cups bcoz there are many sized cups are available in market and everyone filled there cup in different way that’s y measurements can change...

      Hi Amulya..thank you! I use whipping cream (non dairy) from Rich or Tropolite! And the electric mixer I use is from Orpat. I also have a Philips and both work fine. Using them for more than four years now

      Whipping powder is tricky to use. If you are trying this recipe for the first time, don’t substitute any ingredients. Use the exact same ingredients if possible.

      In that case,you will require lesser cream

      Whipped cream. doubles volume from the time it is unwhipped
      So ,3/4 cup of whipping cream will you give you 1 1/2 cup of whipped cream .
      You could calculate accordingly.
      For instance,if 1 cup whipping cream is required,and your cream is already whipped,2 cups of that should be added enough

      Hi Samidha, you have to whip the cream nicely to semi stiff or stiff and be gentle when folding in other ingredients. It sets really well. And dont keep it in the freezer, refrigerate it.

    OK but you could cut the time .
    ie whipping ..just show start n end of process. Don't have to sit there n see it in all..even through you did use speed recording

    It dosent set even after using agar agar. It is like flowing. Do we have to keep in deep freezer

      You don't need agar agar to set it... Please follow the recipe as it is... It is full proof.
      Refrigeration works, deep freezing not needed

      I can try but wont promise, I single handedly do everything right from developing the recipe, to filming the video to editing so it gets difficult. Please bear with it for some more time. Will defintely give all the recipes in written in near future

    Your biscuit layer hasn't set properly. You need the bake the biscuit layer in a preheated oven at 160°C for 1 hour. This will help it to not break while cutting it.
