My boyfriend is Russian and borscht is his absolutely favorite food to eat! His mom used to make it for us at least once a week before she moved across the country. I've been trying to find an easy recipe to make for him and this one is perfect! It's just like the one his mom makes. I'm going to surprise him with this for dinner tonight :)
I cooked this. It is so very delicious. My Russian Grandmother never made it (I don't know why, I am sure she would have loved what I made.). My Borscht turned out perfect. It was beautiful and so tasty. My meat and potatos were cut smaller, as I perfer them to be smaller. I had never had it before I made it, but I immediatly fell in love with it. I love my Russian heritage .

Nicely done !!! I never thought to do a mirepoix. Must giv'er a go. I've opted to use either pot or pearl barley as the carb...no peeling, lots of nourishment, and freezes** imho better than potatoes. The little kernels are fun to eat as well...with that bit of mouth resistance. Have to try the 'chesnak' (sp) as well. **I make 16 liters at a crack ...The first 3 liters as supper for me, the kid and the grandkid, the rest frozen off as fast future suppers, and to send down the road to 2 old age pensioner widows, as emerg. meals for them. Cheers. Hope it was OK to add the variations I'm doing.

We have our version of Borscht in my hometown, and originally learned from the Russian immigrants. Everybody loves it. We use Kielbasa instead of the beef for quick cooking. still taste delicious.

I love borscht, I lost my recipe some time back, but I can say this...left overs are even better than the day it was cooked...it just seemed to get better and better next day and so on. I will have to try yours, looking to garden grow all of my veggies so it should be wonderful.

It looks really nice :) I often prepare borsch for my russian boyfriend and he said it is as good as his mom's :D Just I would never fry the beef but just boil it with a whole red beets and a bay leef mit make my own broth and then chop it all up :D I then also add a sppon or so of lemon juice to the freshly chopped beets to make it develop an even mor red colour and I like the subtle taste of it in the soup :) BUT i will give your version a try too, fried meet usually taste better in any soup anyway :D thank you also for the tip of the tomato sauce. I only used to add tomatos in the frying pan.
maritschie You can sear the meat first to close it so it keeps the moist inside, and for the caramelisation which adds to the taste, and for the fond in the pan which also adds to the taste. After searing all sides you can boil it. You can even slow cook it to make it super tender and still keep the vitamins (by not destroying the proteins).
Tatyana, a made a new friend. He is Russian. He moved to this country alone to go to school and left his family back in Russia. He tried his best to learn our language (English and Spanish) and embrace our culture. I thought it would be nice for us to embrace his. I made this for him and invited him and other friends over. I love beets, but I always thought borscht would be too difficult or have too many strange ingredients for me to make it at home, but this doesn't look anymore difficult than making a pot of beef stew. HI Tatiana thanks for your recipe this soup reminds me of my grandma's kitchen.We use to cook this soup in eastern part of Romania as well but what we add in the end is a little bit of vinegar to make it sour and hope this is the right word i just searched it on google also we add Любисток

Your recipe is the one I found to be the most authentic in preparation [you can never go wrong when you start off with, "This is my mother's recipe...."], so I am glad I found you! I'm making this now :D my mum makes the Chinese version of borscht that was adapted from the recipes brought over from Russian immigrants a long time ago. :P I've always wanted to try the Russian borscht
In Chinese we call borscht "羅宋湯" (Luo Song Tang); and yes the beets, potatoes, cabbage, carrots, meat & sour cream etc. are next to non-existent in the Chinese version of borscht; usually it's just a very salty tomato soup with black pepper and onions. LOL I've tried borscht in Poland before and that alone was nothing like Chinese borscht. There was definitely a lot more julienned beets and even white beans inside.
YummYakitori That's how Borscht soup should taste like lol, when the early Russian immigrants brought this recipe to the northern China, beetroots traditionally wouldn't be used by the Chinese so of course they substituted it with tomato and ketchup.
Yes, you can cut down the cooking time for the veggies to 20 minutes. With the meat, it's 1 hour because it needs to cook a bit longer until it's tender
Hi! I'm russian and I love borsh! (Not borshT! It's борщ (both russian and ukranian) NOT борщТ damn it! :) Anyway, since I love this soup I wanted to check how people in other countries cook it. This is how I got here :) I have to admit, your version is one of the closest to the native russian (I've seen few). Good job! The biggest difference is the way you cook beef. We dont fry it (most of us in russia), we boil it for an hour or more. And then we use boiled beef and the original broth for the rest of it. THIS IS very important IMHO. Ofcourse it adds few other tricks, but you can guess it. Good job anyway! Keep on!
Yes I agree. This is very good recipe but personally I think this is not traditional Борщ. We don't fry the beef and we don't even use tomato paste for борщ. In fact it's not also borsh eventho it's easier to pronounce it borsh the correct way to write it in English should be borshch (щ=shch).
Я ещё многие не режут так крупно марковь и свеклу. Например я морковь и свеклу натираю на тёрке и потом обжариваю по отдельности. Ненавижу в супе крупную нарезку. Ни мясо не жареться а вариться для хорошего бульона, и я считаю это важно.
My only problem is that I went vegan; is it still ok with veg stock and no meat? I also preserve beets in the same way that one preserves cabbage and drop a bit into the bowl if requested. Greek tzatziki to confuse anyone who is vegetarian and likes dill. Loved your video! Hope I didn't confuse people but food is an entry point into so many cultures, excellent!!!
Yada Shinogu The beet root is what really gives this recipe it's unique color and flavor. I guess you could omit the beets but you would have more of tomato soup

I'm making this now :D my mum makes the Chinese version of borscht that was adapted from the recipes brought over from Russian immigrants a long time ago. :P I've always wanted to try the Russian borscht

In Chinese we call borscht "羅宋湯" (Luo Song Tang); and yes the beets, potatoes, cabbage, carrots, meat & sour cream etc. are next to non-existent in the Chinese version of borscht; usually it's just a very salty tomato soup with black pepper and onions. LOL
I've tried borscht in Poland before and that alone was nothing like Chinese borscht. There was definitely a lot more julienned beets and even white beans inside.
YummYakitori That's how Borscht soup should taste like lol, when the early Russian immigrants brought this recipe to the northern China, beetroots traditionally wouldn't be used by the Chinese so of course they substituted it with tomato and ketchup.

Yes, you can cut down the cooking time for the veggies to 20 minutes. With the meat, it's 1 hour because it needs to cook a bit longer until it's tender

Anyway, since I love this soup I wanted to check how people in other countries cook it. This is how I got here :)
I have to admit, your version is one of the closest to the native russian (I've seen few). Good job!
The biggest difference is the way you cook beef. We dont fry it (most of us in russia), we boil it for an hour or more. And then we use boiled beef and the original broth for the rest of it. THIS IS very important IMHO. Ofcourse it adds few other tricks, but you can guess it.

Yes I agree. This is very good recipe but personally I think this is not traditional Борщ. We don't fry the beef and we don't even use tomato paste for борщ. In fact it's not also borsh eventho it's easier to pronounce it borsh the correct way to write it in English should be borshch (щ=shch).
Я ещё многие не режут так крупно марковь и свеклу. Например я морковь и свеклу натираю на тёрке и потом обжариваю по отдельности. Ненавижу в супе крупную нарезку. Ни мясо не жареться а вариться для хорошего бульона, и я считаю это важно.

Can borscht use any meat like even fish? Or ground pork or simply veggies?
Borscht is typically made with beef but you can also make it with pork or chicken, or vegetarian :) I don't suggest fish

My only problem is that I went vegan; is it still ok with veg stock and no meat? I also preserve beets in the same way that one preserves cabbage and drop a bit into the bowl if requested. Greek tzatziki to confuse anyone who is vegetarian and likes dill. Loved your video! Hope I didn't confuse people but food is an entry point into so many cultures, excellent!!!

Yada Shinogu The beet root is what really gives this recipe it's unique color and flavor. I guess you could omit the beets but you would have more of tomato soup
