Well, I made this, but I didn't get my soybeans roasted dark enough.😔 On the advice of a chef friend of mine, I put the kinako in a pan on medium heat and toasted it until it turned medium brown and fragrant. WOW! That few minutes of pan roasting made a HUGE difference! It went from "bean" to "nutty toasty hazelnut-peanut goodness!"😍 Thank you, Chef! You saved the day!🧑🍳💖🙇♀

It has always been one of those things that has kinda just floated off by itself in the peripheries of my mind as, "that thing that they put on warabi mochi." I never even THOUGHT to do all the creative things that you have done here...and now I'm like, "Doh!"

It also tends to taste better when you do it yourself because you can roast the beans longer (store bought ones will go rancid too quickly with a darker roast)

I wouldn't recommend using animal feed for human consumption. As for the cultivar of soy, different soybeans have different flavors. I recommend using one that has a mild flavor with a relatively high sugar content.
Do you know if kinako powder goes well as a topping for greek yoghurt? Brought a bag of kinako back to Australia but still don't know how to do with the most of it.
This is pretty interesting I've been incorporating soy in my diet lately. But I thought uncooked soybeans make you sick? I've been told many times they need to be soaked and cooked for at least 15 min in order to consume them. So I wonder how does it work when putting the powder uncooked like in a yogurt?
Soybeans need to be cooked because they contain trypsin inhibitors so the advice you've heard is correct. Heating the soybeans inactivates this effect which is why you cook them (in this case in the oven).
I love to fry some homemade mochi in the pan and spread some Kinako over it after, it tastes so sick. Maybe I should try Kinako with something else to :)

My advice would be to keep the heat low and stir the soybean flour constantly so it can toast evenly. It shouldn't take too long, and you'll be able to smell the aroma to know if it's done. Yes, absolutely. It's commonly eaten with yogurt here in Japan. I'd recommend adding some honey or maple syrup as a sweetener.
