Say Goodbye to Bitter Coffee - A New Brew Ratio

  • Things that we have kept constant in making the Alishan coffee beans from Taiwan's Galaxy Coffee.
    1) The brew temperature, I am keeping it at 90 Degree Celsius as this has mitigate a lot of the bitter finishing that I have been getting from my previous brew at 92 and 94 Degree Celsius previously.
    2) Grinder and grind setting kept the same. We continue to use the DF64 Gen 1 Version 4, everything else is stock, except the burrs which is now the SSP Cast Lap Sweet Burrs V2. Grind setting is still at 75 and this has been the same throughout the 4 brews so far (including the one I did today).
    3) Brewing technique is kept the same, with minimal agitation to the coffee bed, the pour is separate into 4 stages, first being the bloom where we add 50g of water for 40s. After which I did a 3-stage pour of 80g-80g-90g with a total water input of 300g.
    Thing that we only changed for today's brew is the brew ratio. In the previous 3 brews, we have been doing at 20g of beans to 300g of water or 1 : 15 ratio. For today, we did a 18g of coffee to 300g of water or a ratio of 1: 16.7.

      haha I am slowing down a little bit as I re-think my position and what I am going to do for my cafe and coffee roastery. Hence you are seeing me doing less live videos of coffee operations as I am shifting my focus more on taste, how to improve it in various way, including factors which I am trying out in my previous few videos as well as coffee roasting.

    I'm surprised at the outcome. I would have expected same amount of water with less coffee would make for a more bitter brew?

    You should try slow feeding your beans to the grinder, it will help to lessen the amount of fines and can help with the bitterness.

      The SSP Cast burrs are designed to produce more fine to give a sweeter and more body shots. Perhaps can try it on a brew dedicated SSP Burrs to test if the difference is big.

    I have a df64 gen 1 with ssp hu burrs, i think ive aligned it 95%. but im not sure if im getting the good tasting espresso. Am i able to order an espresso at your shop prepared with a df64 SSP hu?

    Bit of feedback. It might be worth investing in a better microphone. Sound is not as clear as it could be.

      @hyperprotagonist nah. I left it on the table where I brew my coffee and didn't wear it
