    Hi Chelsea! Made a test run of the smaller tiered portion for the baby shower cake i am making next week and turned out GREAT! Hubby said it was the BEST cake he's ever had! That's saying a lot!! Big foodies !! ;) Thanks so much for sharing!

    When your chilling your cakes over night when it’s fully done, do you put something over it or do you just put it in the fridge? Won’t the cake taste like the fridge if you don’t put something over it?

    Hi! Did you bake the bases of the cake separately or you cut them from one big layer?

      Separate. You can tell by the browning. Separate is more consistent and stackable. Layers from a sheet cake can be too soft to stack sometimes.

    Do you cut off the dome part of the cake so it sits flat or do you use a technique that allows the cake to bake flat?

      both! My cake layers bake very flat based on the recipe, but I also still trim the tops, to make sure they're really nice and even!

      For this I used about 2 batches of my cake recipe! i usually refrigerate overnight, but the buttercream won't spoil if it sits out!

    Hi Chelsea! When do you put the center stabilizing dowel into the bottom cake? After it is all put together and then "hope" that you hit the hole in the drum? LOL! Or.... do you slide the cake layers onto the dowel, and then slide the cake down the dowel? I've seen it done both ways but your video doesn't actually show you doing that part. Thanks for your help!!

      It's all about preference! for me, it depends on how far I make the tiers in advance! if I plan to make them several days in advance, I won't insert the dowel into the tiers because it makes it harder to store in the fridge, and poking a hole can leave the cake layers exposed to air and potentially dry it out. If I'm making the cake the night before and plan to stack it before the event, I'll insert the dowel into the bottom tier once it's made, and then guide the top tiers onto the dowel!

    I love this video! Chelsea, have you ever came across when building your tiers. Pulling them apart and the buttercream stick to the cakeboard on the bottom top tier? And pull off the bottom buttercream? If so, how to fix that issue. Thxs! Your the best!

      thanks so much for the quick reply! One more ? , if I only use buttercream frosting (your recipe) does it need to be refrigerated? Thinking of making one layer with the straw. puree and one layer just buttercream if it means only one layer needs to be refrigerated :) trying to think ahead thanks so much!

    Where did you get your bench scraper? I can’t find one that tall

      This one is actually only six inches, which is the standard size! I got mine on amazon! Wilton does make a 9 inch bench scrapper though, if you're looking for a taller one!

      If you go to the paint area at home depot you'll find all sizes of scrapers from $ 3+. Better and cheaper than buying at cake suppliers.

      It will look irregular but you can do it!

      I think this cake would feed about 40 people! I'd say 16 people from the six inch tier and about 20 from the bottom tier, give or take!

    Do you ever use thick straws in place of dowels? Do you think there's a limit to using the straws rather than attempting dowels?

      sometimes! But I hate how much cake they end up removing! I haven't made a super large cake before, so i haven't really tested the weight limits of them!

    Hi! Big fan of your channel and Instagram! I'm making this exact cake for a friends wedding. Two questions... I'll use your buttercream recipe, how many batches would you say these cakes took? 3? 4? Also, I always struggle with how long to leave my butter out to soften. I live in Houston and even in February there is humidity and in the 70s right now. Suggestions on time? Overnight? Couple hours? Again, thank you for all your useful tips!

      these were an 8 inch and 6 inch tier, so it only took about 2 batches of buttercream!
      I live in NYC, where it's pretty cool this time of year! I leave my butter out overnight. But if your kitchen is really warm, you can definitely take it out a few hours before!

    Pretty cake, but that cake board should have been covered with frosting.
