I had to eat a lot of insects, snakes, and of course rice fields rats to survive during the evil Pol Pot genocide. We were sent from Phnom Penh City to dig cannals and dam along Pursat River next to Battambang Province. Most of my family members did not survive and only two of us made it out of 12 . Just came back from Cambodia about a month and a half ago. The food was the best I’ve ever had. Everything was caught, killed, or pulled out the earth that day and the way they grill over a wood fire gives everything such a good char flavor you immediately notice when you come back stateside (and I’m Texan!). The biggest observation I made was that they eat the animal whole for EVERY meal. I love Cambodia and can’t wait to go back. I encourage anyone to travel and see it especially Angkor Wat which is a masterpiece of a Hindu-Buddhist temple complex.

@@Sniperboy5551 Unfortunately, the majority of Americans are indoctrinated to think rats are gross. You will never swing the masses to switch from cows, pigs and chickens to eating rats. It doesn't help either that rat farms such as this one hardly exist in the US. But I'd definitely substitute rat meat for beef once or twice a week, especially if it was affordable! Guinea Pig is another outstanding protein!
Rats and guinea pigs don't have much meat on them. They're not efficient compared to say chicken and rabbit. Those animals have been selectively bred to get meaty on less food.
