You can find it below as well: Ingredients for 3 serves: • 6 Medium Potatoes • 2 tsp Salt • 1 tsp Turmeric • 1 Onion • 2 tsp Mustard Seeds • 2 tsp Curry • ½ tsp Black Pepper • 2 tsp Olive Oil • Parsley Step 1 The first step is to bring the water to boil in a large pot. Meanwhile, we prepare the potatoes. For this recipe I used 6 medium potatoes that I cut into cubes. Add 1 teaspoon of salt in the boiling water and stir. Add the potatoes and now it’s time to add the first flavor: 1 teaspoon of turmeric. Stir and then let them boil until the potatoes are fork-tender, approximately 20 minutes. Step 2 Meanwhile, chop 1 onion for extra flavor. Strain the potatoes from the water and transfer to a large bowl. Add the chopped onion, 1 teaspoon of salt, 2 teaspoons of mustard seeds, 2 teaspoons of curry and half teaspoon black pepper. Stir until all ingredients are combined. The last step is to add 2 tablespoons of olive oil and stir again. Step 3 Transfer the potatoes to a baking sheet. Bake them for 40 minutes at 180°C Remove from oven and serve hot! For more freshness, add parsley on top. Bon Appetit!
I baked them at 180 F the first time on accident. Let me tell you, that is not hot nor long enough for it to do anything at that temperature. 180 C is 356 F.
That was a big 1 tsp. (teaspoon) Of Turmeric, sorry just an observation, you didn't mean tablespoon? How long to boil the potatoes? Looks good and simple will try it today. Some of the receipts on here use too any ingredients we all don't have or ever heard of. Thanks Richard.
Leave the turmeric out and add instead a little ginger powder, a bit of ground cumin and if you have ground coriander, too! Since you can’t have turmeric, don’t use the curry powder, either! Because it has turmeric, too! Instead use Garam masala, which is very fragrant and tasty! Just add a bit at a time, don’t go overboard with it! Continue with the rest of the recipe! BTW, Indian recipes don’t use parsley, only coriander and they other herbs that are very fragrant (like curry leaves, which I totally love) and please know the most Indian potato snacks are made with garam masala! Hope this helps you!
Great video with a slight twist of an iconic Indian recipe. The traditional oil of choice for cooking in most parts of India, except the southern region, has always been mustard oil, though for this recipe it would typically be mustard oil. However, other types of cooking oils like canola, olive, sunflower etc. are gaining a foothold for various reasons. Mustard oil brings out the flavour of Indian recipes and cuisine like no other and it's healthy too!
Made these once and now every time we have potatoes I do them. So delish 😛

For REAL BOMBAY POTATOES....you have to have BRAHMA COWS shitting in the streets ....gives that very SPECIAL fragrence /fragrassance ?.
This is not Bombay potato.
This takes a while…not “easy” 60 mins + 😮 I counted 3 ramekins, 3 pots, one baking sheet and one plate…just for potatoes…plus ingredients. 😮
