Bombay potatoes are maybe my favourite thing to order in an Indian. I've made my own before but they always seem a little lacklustre. I will definitely be trying this recipe. Thanks.
Just made this tonight for tea and must say it's by far the best Bombay potatoes I've ever had.Since I had it as a main for tea ( not all of it) I added some pieces of Chicken Tikka and it made a brilliant main dish.Many thanks for this excellent recipe Al. 😊
Haven’t done the book yet but your presentation and attention to detail is top quality but best of all is the taste of your curries which are simply superb!
you should take a vacation to Kerala, and when you come back make a series on south indian curries. South indian cusine uses different cooking techniques and flavors.

Hi Al, tonight, I made the Bombay potatoes using your recipe; well, what can I say? The wife said it was the best she had tasted, and she always orders Bombay potatoes whenever we have a curry. I was hoping to use your spices, but as someone mentioned below, I still have not had my order from Spicey Joes from 3 weeks ago. and they are not replying to my emails also.
Could you freeze a couple of portions? Make many of your recipes and freeze them. Great to be able to get them out of the freezer in the morning and heat for dinner when I get home.
Really tasty these are...but a bit like the Keema Aloo, it never seems (to me) to be a 'proper' curry - though last time I did it a bit more 'saucy' by adding more water and not reducing it too much, so was a bit more like it.
Can Al or anyone in the comments explain the chopping of the onion,i quartered the onion then boiled for about 4 minutes,is there a better way should i have cooked them for longer.
As long as the onions are softened and can be blended to make the onion sauce it doesn’t matter if you quarter them or cook them whole; they soften quicker when quartered. Just don’t add too much of the water to the blender or you’ll have a watery onion sauce. You want it the consistency of Al’s sauce. Good luck.

Al after cooking BIR for so long and i myself cooking it 8+ years, do you ever feel sceptical of the recipes like they all blend into one and taste the same , with little variety between dishes ? Particularly the BIR tikka masalas which NEVER taste like any takeaway ive tried, yet they are proposed to be "just like takeaway" . I reckon we both could cook a great curry but there is no denying any of the BIR stuff online tastes nothing like a takeaway. Even authentic dishes from india have a good range of tastes between them , but the public BIR recipes just dont produce the same range of varying flavours youd find on any real menu
The takeaways re-use their cooking oil, which has been used to fry pakoras etc. Tons of flavours through this! Try looking at making your own oil or better still re-use the oil after cooking your own pakoras. 😊

That's funny. I was just remembering bombarded duck, and how it was all the rage. The first time I ever went to an Indian restaurant in the 80s ,I ordered it and was shocked how bloody awful it was.
Alberto, precious BIR Maestro, Mallmannian culinary principles double, sometimes triple, the quality of the dish, especially curry, even with lacto fermented components!!!

I have three other receipes for this but tried yours tonight and really enjoyed it. Added mango powder and half a tomato at the end.
I don't eat boiled potatoes but I'm an addict for Bombay Aloo and now I got a new recipe, thanks Al you're a star.

you could throw in some leftover tandoori/tikka chicken bits and some creme and you'd have a tikka masala!
