Well in a way you're supposed to feel bad about killing Gwyn. Here was this guy who took power from the Flame, became a thunderbolt hurling God and led the charge against the everlasting dragons, ushering in a new age of prosperity, now reduced to a withered husk, a mad hollow that probably doesn't even remember who he is anymore driven insane from burning as cinder for a thousand years. Although he does retain some of his power, It's not so much a boss fight as it is a mercy killing cuz damn bro now getting defeated by a stalagmite.

I've got a headcanon that the reason he fights more coherently and less like a hollow in DS3 is because with more lords of cinder linking the flame he had something almost like subjects and that helped him regain a little sense of purpose
