This is the first time seeing these tripods. I once had to do something like this and I ended up using some 1/16" thick plastic squares stapled to the subfloor. I just left the shims in place as they were just 1"x1" squares and did no harm to the finished floor.
How you can know how many self leveling compound do you need? Also self leveling compound not spread by themselves. That’s why need to see all picture. Hope, I answered you?

Many ways to do the leveling but with tripods the easiest way.
Do you not put underlay beneath the flooring?
That vinyl floor with underlay already.

Why do you need to know the height everywhere if it's self levelling? Wouldn't you just work toward the highest point?
