I’m Sicilian…I have both Parmesan Reggiano and gochuang in my refrigerator right now. Along with every other ingredient in your recipe. Let’s agree that it’s OK to expropriate each other’s culture in the name of cooking really great food!

I just hate it when people imitate a dish badly but to make it sound fun call it with their own twist ….
But the cream, man!! he doesn't need it! He has butter and cheese already!
@@justinsbuzzCream does certain things that butter absolutely cannot. It also tones down the spice from the gochujang.
French Italian here, I make very authentic roman pasta dishes but also love cooking pasta and mixing them with my homemade Sichuan chili oil or gochujang with pecorino cheese.
Fermented chili paste or kimchi both go very well with any cheese but especially with sheep milk cheese or aged cheese.
I know Aaron is the master chef behind these recipes, but Claire is the one who really sells it. I used to work in a banquet kitchen (as a non-chef) and a good palette and true understanding of flavors is less common and more coveted than you’d think. ❤

Aaron, when I watched you make gochujang Alfredo yesterday, I had my doubts. But since I happened to have all the necessary ingredients in my home (gochujang, Korean red chili flakes, oyster sauce, garlic, green onions)-who doesn't-I made gochujang Alfredo for dinner tonight. Wow. It was great. Trust me.
I've made a few recipes from this channel and they have all been killer. But this.... I don't think I've ever been more excited to make a TH-cam video recipe in my life. I'm dropping everything and going to the grocery store tomorrow!!! :0

As an American of partial Italian descent who knows the differences between how American Italians and Italians in Italy nowadays do things…your “heavy cream in a pasta” comment was superb! No notes! 10/10
Not "Authentic"? It looks like real food to me. What is "authentic" anyway? All the chilis Korean cuisine employs didn't exist on the peninsula until they were brought over in the 16th century. Flavors in food are like colors in painting: use what makes the end product work. :)

Probably just a disclaimer because a lot of people are super weird about pasta dishes having to be "authentic" and don't like any fusion dishes like this... I dunno why, one if the best parts of cooking is when things of different cultures come together to make something yummy.
Also, aren't peppers able to warm the feet through the toes such as in socks if ground into a powder or paste?
I mean, Alfredo isn't an Italian Pasta to begin with so who cares!!

I just received your beautiful cookbook. I haven't cooked anything yet, but I really appreciate a large, color picture of the food for each and every recipe!!!! Looking forward to making them. I lived in Seoul, for a couple of years back in the '50's, next to the Han River, and wow, South Korea has come a long way. Lived in the Bando Hotel, the premier hotel back then for a year, with my family, before our house was built.

@@AaronandClaire Well, my stepfather did. Poverty was everywhere after the war. He worked for the U.S. government to help U.S. corporations get set up, to rebuild S. Korea. The orphans were particularly sad to see. I was just a kid myself and realized how lucky I was, and we moved from India!

I made this with my son earlier this week and came back to say this is now one of my favorite dishes. I am gluten-free and didnt have big wide noodles but i did have tteokbokki (cause why not) and it turned out great!
When I saw this recipe I love pasta so I went out and got the ingredients I didn’t have. When I cooked it I couldn’t wait to eat it. OMG, it was so good. Now I have a new favorite pasta dish. I love Korean food so with Gochujang paste it was nice and spicy. I have your cook book and love how easy you make it to cook. Thank you so much.

This is a prime example showcasing why we shouldn’t be afraid to mix culinary cultures. I totally love this dish with grilled chicken or seafood; and the tip on toasting the black pepper is a very nice touch. Please bring more idea along those lines. Thx for sharing.

The cream is the sauce helps people who don't like spice enjoy the lovely flavors spices put into the dish. Love your recipes! You've made Korean cuisine accessible for me. Highly recommend your cookbook. Some cookbooks have 3-5 recipes that are actually doable or appealing. I find all yours doable and almost all are appealing to me. Home run.
I made this last night and it was the bomb! It can be made from pantry ingredients except for the cream which I don't keep on hand. I used Greek yogurt with a glob of cream cheese instead and it tasted really good.
Made it the other night exactly as instructed.. It was easy and delicious. Husband can't take the heat so more for me! Reheated well, too. Thank you for the recipe.

Aaron even says you can use grated parmesan *gasp* but then explains the downsides so you can make a choice for yourself.
The combination of creamy Alfredo and spicy gochujang is genius. I never would have thought to mix them, but it’s definitely a new favorite.
I finally made this and it lives up to all the hype on YT. I used Bucatini pasta, that's all I had in the pantry. Never thought about toasting the black pepper before. Wunderbar.

I'm eating this dish as I'm writing this comment. Sooooo creamy! Soooo much umami!!! Instead of Gochujang (I'm shy from chilli, afraid of spiciness 🙃 ), I used mild Ssamjang paste, and it turned out great. Thanks for sharing the recipe!
I made this last night for the family dinner. Doubled up the ingredients to feed my tribe and it was amazing. It wasn’t as garlicky or spicy as you might expect so don’t be put off. This recipe is DEFINITELY worth a try.
At first I thought I messed up the sauce but it turned out great! So delicious. It took me longer than 15 mins because I’m a beginner cook but I will definitely make this again!!! 😋

I really love a creamy pasta dish. Pappardelle is my favourite pasta. I am definitely making this! I think I have everything except the cream. Clare said to add some chicken if you want protein, I love chicken alfredo, but I don't think I'll be adding it to this dish.

seen this today and just had to try it ... ended up using penne pasta , 2% milk , and pre-grated cheese since its what i had on hand ,but it was still delicious . i had accidentally bought the hotter gochujang container a while back accidentally and its been too hot for most thing for me , but this paired perfectly since the dairy kills some of the heat. thanks as always for another great recipie

Don't worry about it. Tomato sauce with gochujang and a little bit of soy sauce is also a good combination, my friend!! You can try that too! 😍
I use vegan substitutes like Vegan parm or nutritional yeast and a bit of vegan mozzarella. Then some roasted chicken breast. Fake cheese, real meat and very tasty😂
I bet gochujang added to garlic and olive oil would be great, replacing red pepper flakes.
Maybe some soft tofu, blitzed smooth in a blender, would give you that smooth, delicious texture. ❤

I love gochujang in creamy sauces, it adds so much complexity and flavor. A good creamy parmesan garlic sauce with a spoon of gochujang is good on ANY pasta or carb (dunk garlic bread in too, it's crazy good)

I've made gochujang, doenjang, kimchi and ssamjang carbonara. Gochujang being my favorite one...being Italian, well doesn't matter, your recipes are so good ❤👍
I made a kinda similar version but vodka sauce inspired, with gochujang, green onions and soju.
Btw in Italy fettuccine Alfredo (burro e parmigiano) is just butter and parmesan.
