Man oh man… I so wish soy didn’t make me sick because those nachos look AMAZING. But last time I tried an impossible burger it was a bad night so… we’ll have to make our own nachos.
I'm so bummed with how Enjoy Life has changed over the years. They stopped lots of things we counted on, including their cocoa loco bars which were a staple for me to keep in my purse for my daughter. RIP Enjoy Life Foods, indeed.
We totally agree. I (Sarah) miss the days of Joel & Co. there and so many of their items. ELF products were some of the first gluten free and allergy products I had back in 2009 (at WDW!), and I miss what it was then along with so many of their products. It was truly a sad day when they closed their bakery. 😢

Aw that is such a bummer. 😢The nachos were great but definitely great if you can't do soy. We are totally making a version of these at home too!
