Especially when the crystal structures are identical and the quality of the lab-grown ones are so good that they can pass for mined ones to some professionals? I'm not interested in contributing to the negative environmental or human impacts that mined stones have. If you have to go with "its low quality proves it's a good stone" it seems frankly ridiculous to me.

Essentially you are not getting ripped off by your jeweler if they seldom sell emeralds, just expect a higher mark up from them as they go through multiple sellers/dealers to get the ultimate product to you. Emeralds aren't my thing, but I very much enjoyed your video. The great thing about a natural gem is you can get to know a stone like a person. Its little quirks and highlights, all those things that make it unique. I like synthetics too, especially when it comes to color changing gems that can become ridiculously expensive for just tiny gems (Alexandrite).
