+ItsAScout "Conga" eel as we call it is Barbados is actually a sweet tasting fish with a texture similar to red snapper. it's the one fish that you would never get at the fish market because fishermen keep it for themselves because it's so delicious. It would have tasted amazing without him blending it. My favorite way to have it is fried.

everyone knows that gordon is an excellent and well experienced chef
but humans don't base how appetising food is solely by taste, since by the time you taste something it is already too late for regrets
we base our preliminary appetite by its aroma or appearance, and these have served our evolution by preventing us from eating potentially toxic things
now bouillabaisse is a type of seafood stew with many other ingredients and as with any other stew, you would expect to be able to see what has been stewed in it
even knowing that gordon was making quite the unorthodox bouillabaisse, you would still expect to see the conger eel and various other ingredients mostly intact in the finished dish, since that is part of what constitutes a stew
and he was indeed, as seen in the video, stewing the conger eel in the pot
until he put it into the blender, the contents of the pot constituted a stew
if you blend the contents (and serve them in paper cups), it no longer constitutes a stew, since the ingredients are no longer recognisable
it is also objectively less appetising; the paper cups make the servings look small and vent the aroma upwards, and the lack of visibly recognisable foods draws out an instinctive suspicion
while i wouldn't say that the dish was ruined, the execution was definitely subpar, and i would be confident in saying that gordon would never have soup served in a paper cup in one of his restaurants

Absolutely lovely to eat, I have had it cooked by several friends of different cultures. The best was done by a Samoan mates wife who baked it in the oven with a few different herbs with fish oil and soya bean sauce. I have been catching conga for years.
