I made his carne asada fries and the avocado sauce he does with greek yogurt. Both are staples in cooking now. They were AMAZING! I have done off versions of other stuff he has cooked too. Always fune. The carne asada marinade is also a staple for me and the family. They loved it! Soy sauce and all! There are several others I have in the works too. OH! I made the leftover pizza eggs too. Fucking great!

The flavor of the crust developed by this approach with anchovies(I crushed 3 boneless skinless anchovies in a mortar and pestle) is simply amazing. I love this flavor. Total believer in anchovy.

Changed how I cook a rib roast a couple of years ago. The rub is a compound butter with lots of salt, pepper, and aromatic hers. The roast goes in the oven at 500 degrees for 6 x the weight of the roast. At the end of that time, turn off the oven for two hours. At the end of the two hours you will have a roast that is 135 degrees in the center and is already rested and ready to eat. Just don't open that oven for 2 hours. Want it more rare? Multiply the weight by 5. Give this a try Sam.
Hey Sam! To carmelize onion faster try adding about 1/8 of a teaspoon of baking soda. I know this sounds strange but there is a lot of chemistry here that I won't bore you with but look it up I'd love to know what you think about it! also yay to anchovy paste
