    Larry, those look absolutely awesome! My wife and I were drooling watching this, well I was anyway, and realized how long since I made these.     Great idea - think I can do the initial part of cook on my direct heat cooker - then at 175 or so put them in a braising liquid and back on the cooker

    so if you keep the temps at 225 does that mean less trimming? Reason I ask is these are $10 per lb by me.

      No, I’d still trim the same amount. My trimming is not impacted by what temp I’ll cook at. Hope that helps.

      @@RaceviceSmokehouse Morning. Your comment helps. I’ll be ready to trim. I just wish that the oxtails by me were cheaper. I hate having so much fat to dispose of from the trimming
