I must have watched twenty-five or more how to videos. Lamb shanks are expensive, so obviously, I did not want to muck them up. But here's the thing, I keep coming back to my favorite chef, and here's why, because of all the recipes I've made --- I have not been disappointed! Chef Matthew makes the process easy to follow and the results are always pleasing. I understand that for some it might be daunting but if you watch and follow the directions you will have success. My daughter and I have just had this amazing meal --- served with mashed garlic potatoes, carrots/broccoli medley, and of course, the beautiful sauce/gravy, and a No Knead bread. For dessert I made a Pineapple Up-Down cake. I sure pray heaven is like this...lol.
Just made this for my husband and he loved the sauce! It took 30 extra minutes in the instant pot and for the sauce I blended the cooked carrots, onion, and celery to thicken the sauce. Will definitely make again.

Reminds me of part of my special curated "Pen, Pasture nd Patch," combo: A braised 12 oz. pork belly, with a Teriyaki marinade, served next to a braised lamb shank. Top it off with fingerling potatoes gently pan roasted in EVVOO for the side.

As always, your dishes look mouth-watering. However, my old neighbor (RIP) made me discriminate against lamb. I was telling her what I was making one day and lamb was on the menu. She said to me 'How can you eat something that goes baaaahhhh, bahhhhh)? I said the Hell if I know...Just like I'd eat stuff that says moooo or cluck? Any who, when I went to eat the lamb, all I could think about was the bleating sounds, thus she convinced me that saying baaahhh was worse than saying moooo and I've not messed with lamb since. (true story) 😃
