Thank You. As you will notice I don't maker with all the faff - it gets checked in and whizzed up - Eggs go in altogether and flour gets thrown on to stop it curdling and the cake rise everytime. You dust the cranberries, cherries, or blueberries with the flour and fold them into the batter just before you pour it up. Dried fruit is less likely to sink than frozen or fresh but I dust it, too. It's always worked for me.

One of my favourite taste combinations. I also soak dried cranberries in the orange juice, I'm lucky to have the option to leave them overnight. However, I also grab the fresh cranberries as soon as they're reduced for quick sale this time of year., and freeze them for when I need them. Great recipe again Rik, thank you❤

It looks like a moist tasty cake to me Rik 😋, whether your cranberries sank or not. Is it possibly the weight of the orange juice soaked berries that pulls them down, adding additional weight that the fresh variety wouldn’t have 🤷♀️, who knows, but ultimately it’s how it tastes that matters! Great cake.... My mum made a beautiful Cherry cake, no fuss, no coating them in flour and they never sank to the bottom. Can I do it, can I heck! They always sink to the bottom, whether I coat them in flour or not 😂😂😂
Never had stuff sink. Got your mixture too sloppy maybe. It should not drop off your spoon too easily. I think if you do it in those food mixers it tends to do that. I use a hand whisk only for the butter and sugar mix and then a wooden spoon.

Great looking cake. I find that fresh cranberry sinks less than rehydrated cranberry. I think rehydrated are heavier but never weighed to prove my point. Also, cutting into smaller pieces, like eighths, is tedious but reduces sinking. Thanks for the great video!
Looks delish but I am not a lover of cranberries, so as you had difficulty with keeping them from dropping to the bottom of the cake perhaps you could help me with cherries! I love cherry cake (glacé type) but no matter what I do they always drop to the bottom of the cake. I’ve washed them, dried and rolled the in flour, even halved them but no success. Unfortunately it is hard to find true pure dried cranberries in many places. They are almost always heavily sugared. But I have plenty of fresh from BC Canada.

Also, I had a wonderful Orange Cranberry BREAD, not cake, that had a glaze and one could toast it with butter! How would one change slightly your recipe to make it a bread?

The trick is to use cold ingredients then place the batter in the fridge or even in the freezer for 5 minutes. Then add the fruit and bake in a preheated oven. This way the fruits don’t have time to sink before they are trapped in the cooked batter 😊

I can't mate I didn't cook it in there - aim for Temperature: Reduce the temperature slightly to 325°F (160°C). The lower temperature prevents overbrowning. Start checking the cake after 40 minutes. It might take around 45-55 minutes, depending. Could be less with the fan on the HYSap. I won't be cooking in the HYSap for a while. Its the time of year when I need to cook larger (family) amounts all will be cooked in the Electrolux which is 70L and more efficient. Thank you. Best, Rik
Made this yesterday. It was absolutely delicious. Sadly the fruit sank to the bottom, just like yours. I am wondering next time I might put all the cranberries on top and then bake and see what happens.
