      I admit that at first it didn't sound very good. But coming from a land that makes tasty pies from sweet potatoes I think I'll give it a try. Obviously fresh carrots from the garden would be best.

    I'm a Persian and I love this video and carrot jam
    by the way we have other kinds of jams that are outside of the box! like watermelon rind jam or pistachios jam!

    Merci Alex! i come back to this video every year :-) 5 years now and my jam is never as thick and shiny as yours, but we still love it. i try to use the 2:1 or even 3:1 jam sugars instead so that could be why.

    You keep amazing me with your boldness in trying different things. I have Persian roots. My mom used to make us lots of carrot jams. And always with cardamom and saffron. Tastes amazing. Great job 👍👏

    Makes beautiful jelly! I got the canning-bug after watching this at 10pm & by 2 am I had 4 jars of the most amazing carrot jelly! :o) I added cinnamon & nutmeg (plus lemon juice for safety). A M A Z I N G! I'm planning to add this between the layers of my simple-no-frills carrot cake. Can't wait! Thanks for sharing Alex! :o)

    Aww this is one of my favourites. My mum makes it all the time. Also you can add blanched almond pieces (stick cut). You can also just grind the cardamom into a semi-powder and add it into the jam for a fuller flavour.

    If I died yesterday I wouldn't know that it is possible to make carrot jam! This is amazing! Especially because carrots don't loose vitamins by long cooking! I am going to make this jam tomorrow, thank you!

    Frenchie, one of my favourite Iranian (Persian) jams is sour cherry jam but there are a lot of different delicious kind of jams which you can make such as figs jam and quince jam.

      yum sour cherry jam!! We used to have a sour cherry tree when I was small, it was my favorite!! I adore acid fruit in jams and sweets, like red currant, raspberries..

    I am persian (the original Persian version of course! :D)
    My mum makes this with orange blossoms in it. Have you ever tried orange blossom jam? If not get yourself to a Persian grocery and get some. Of course it won't be as lovely as the homemade one but you'll get the idea.
    So ... how did you come across this recipe? Do you have lovely Persian friends?

    Frenchy, after watching your videos for a good bit now I've come to realise 1 thing. That you've got an amazing talent of making things fun, easy, and help catalyse a strong intreset in cooking. BTW my favourite spice is cardamon, tea is not the same without it. Oh and saffron!? I'm sure it will be a great addition with the jam :)

    I love preserving, but I work with what I got.
    We had plenty strawberries last month, now we have raspberries and cherries, and I make jam out of them all, one at a time. Don't care if you think it's boring, I have loads of free delicious fruit!! :D
    The carrot jam looks beautiful, maybe I'll make it in winter when we're out of fruit, with the pumpkin one.
    I use regular or brown sugar, and Agar-agar as gelatin. I like the result better.

    You could blend the carrots, couldn’t you? Also, I make my jams without any sugar. I use a mix of better-for-you sweeteners and add some pektin and it works great! One of my faves is lingonberries and apple jam! I like it smooth, so I blend everything before cooking.

    Yum! I love making jam. My favorite so far is a persimmon and pear jam with lemon peel and cinnamon. As for making jams I have a few questions: considering jam sugar is just sugar + pectin, if we can't find this variety what is the ratio of sugar to jam? Also, I believe citrus peels contain there own pectin so could we just add more to get the desired texture? (or would that just overpower the flavor of the carrot and other spices?)

    Can you do lemon or blackcurrant curd. I get so many eggs given to me and then free blackcurrants. the curd is awesome but doesn't last so long as jam.

    I’ve made it yesterday.Had a friend try it.She said it was lovely BUT she felt too sweet for her.The reason I’m commenting this way is…..If you are not a sweet tooth,you may find it sweet.She recommended less sugar and use jam setting powder.Having sweet carrots and sugar.I enjoyed making it and making more as gifts.

      clarence spencer I used jam sugar which has integrated pectin in it.

      oh, i didnt know that. thanks. i didnt know what "jam sugar" is. have never seen it here in the States. so, if one uses just regular sugar, should he add pectin? AND, by the way, i did make this, added no pectin, but instead boiled the sugar syrup separately for like 2-3 hours until thick, and then added it to the jam. it came out just fantastic!! THANK FOR THE RECIPE!!

    Hi! Just wondering - the self pasteurization technique (spelling?) can it be used for all jams/tomato sauces/perserves? thanks!

      AmmyBelle No I think it only works with jam. Sugar goes way over 100°C and kills a lot of bacteria doing it.

    Very nice jam recipe.I will try it with shredded carrots so i can feel a little bit what i'm eating.I really doubt if this jam can last up to 1 year without canning it or at least be 100% sure that the jars are perfectly sterilized.Washing with just hot water and a sponge (which contain millions of bacteria) doesn't help to much.At least place them in a 130 oC oven for 30 minutes and remove them from the oveonly when needed or they will cool down too much.

      ratguy101 Unopened : Long time in a clean and cool, dark and dry place in your kitchen. Opened : 1 - 2 weeks in the fridge.

    Why is it so important to always use a new lid and where did you get new lids (if you don't use professional jam jars)?
    My mother always reuses storebought jam jars where we have eaten the storebought jam and that she has put in the dish washer, before refilling them with the new homemade preserves.

      I followed the instructions given by the manufacturer. But If you have instructions by your mom, I think it's good too. :)

      +Alex French Guy Cooking 'cause it helps so much with the preservation, that's why. Nowadays, you could go much lower and keep the jam in the fridge, for a short period of time.

    too runny for me.. even after 3 hours of cooking 😔 i think 1 liter of water is too much. i couldnt get the right jelly texture..
